From Stained Glass to Fireside Cocktails
An ode to the Arts and Crafts movement, The Lodge at Torrey Pines is an impressive yet understated luxury resort. Its signature restaurant, A.R. Valentien, felt like the perfect setting for our celebratory dinner. Enter through The Lodge’s striking triptych of stained-glass doors depicting the Torrey pine tree.
Plan to spend some time enjoying the beauty of this elegant lobby with a roaring fireplace and floor-to-ceiling windows looking over the golf course and ocean. Make your way into the moody bar area, where dark wood accents and a sculpted copper fireplace hood carry on the Torrey pines motif, alongside intimate seating for a pre-dinner cocktail.

Take a moment to peruse the glass-enclosed curio cabinet near the hostess stand, filled with artwork and photographs of the restaurant’s namesake, A.R. Valentien, a California artist of the early 20th century. His nature-inspired work also graces the cover of the menu, alongside paintings displayed throughout the restaurant. Seasonal Beginnings, Thoughtfully Sourced
A.R. Valentien’s menu flows with the seasons, highlighting locally sourced ingredients from premier farms and ranches across California. My sister and I shared the Fall Pear Salad dotted with the sweet crunch of candied pecans and creamy bites of Humboldt Fog goat cheese, tossed with a tangy sherry vinaigrette.
The Aleppo Marinated Baja Shrimp appetizer was a standout, featuring tender U12 shrimp expertly charred and served atop a bed of frisée with a citrusy sauce delivering just the right hint of heat. My sister declared the combination such a success that it made the often-bitter frisée so delicious we left a clean plate. Our waiter, Ryan, recommended pairing this dish with a Riesling from the Cobb/Cole Ranch winery in Mendocino County, offering a sweet counterpoint to the spicy dish.

Confident Plates from Land and Sea
With so many enticing options — duck breast, crispy-skin kanpachi, braised halibut, or prime ribeye — choosing wasn’t easy. My sister and I opted to sample both surf and turf: scallops and lamb. The caramelized sea scallops were juicy, with a delicate sweetness balanced by the earthy celery root risotto. The dish was topped with a sauté of foraged mushrooms and toasted pine nuts, finished in an elegant scallop jus.
I paired my meal with a lovely glass of Arnot-Roberts Chardonnay from Napa Valley, whose mineral notes offers an unusual counterpoint to the more typical fruit-forward profile of a Napa Chardonnay.


In contrast to the scallop dish, my sister ordered the oven-roasted California lamb. What could be more pleasing than the dramatic presentation of three Frenched lamb chops? Cooked perfectly medium-rare, the chops were served with a hearty lentil ragout brightened by the sweetness of confit bacon and roasted baby carrots. The dish was finished with an elevated pistachio-mint gremolata and a savory lamb sauce.
A Finale Worth Saving Room For
Not to be outdone by the entrées, each dessert tempted us — from fruity, light creations to decadent, rich chocolate dishes accented by salted caramel or praline crémeux. After a big meal, we went with the lighter choices: a caramelized apple cider torte served with ginger ice cream and the show-stopping grapefruit givré.
Both desserts were excellent. The torte’s base was a salty caramel topped with a crisp, buttery shortbread cookie, paired with a scoop of ginger ice cream and freeze-dried apple slices, the perfect fall flavor combination. The grapefruit givré, however, was a marvel — so memorable I’m already planning a return visit to experience again.


I commend the pastry chef for the inventiveness of this dessert, which arrives on a plate of ice holding a hollowed globe of frozen grapefruit. A crisp almond streusel toile is delicately draped over the grapefruit shell, crowned with wisps of halva that burst forth like a pompadour.
Eating it feels like opening a present: once past the outer layers of toile and halva, you uncover the surprise — a sweet-tart ruby grapefruit sorbet folded with bits of chewy, rose-flavored loukoumi (think Turkish delight). Bright citrus notes and playful textures combine for an exceptional finale to a special evening.
A.R. Valentien: A Return-Worthy Dining Experience
Our exceptional server, Ryan, elevated our dining experience with his verve and joy as a fellow food enthusiast, while maintaining a high level of professionalism. He answered all our inquiries about the enticing menu options, complete with wine pairings, and expertly paced our meal from appetizer to mignardises and coffee. Ryan’s warmth and engaging personality added to our overall enjoyment of the evening.
A.R. Valentien effortlessly balances a farm-to-table ethos with refined, gourmet offerings.
