Behind the bar

Ask any Chapel Allerton local and they’ll know where you can get the best cheese. George & Joseph is a staple piece of this little Leeds high street – and for good reason. However, the man behind the (cheese) wheel, Stephen Fleming, hasn’t always headed up his own business.

Before venturing into the now-infamous George & Joseph, Stephen had worked in IT for 20 years.

“I’d always done what I was best at, at school. It was sort of ‘what are you going to do for A-levels, what are you doing to do a degree in – get a job in it. I did enjoy it but I just had a bit of ‘what if I’d done something differently?’”

Having toyed with the idea of owning some kind of deli, it wasn’t until he started going to a Leeds-based cheese club that the idea of opening a cheesemongers really took his fancy.

“There was nowhere to buy good cheese in Leeds – so [I thought] why not try it.”

After setting up shop just off Chapel Allerton high street, Stephen began selling quality, Yorkshire-based cheeses.

Four years of trading out of their tiny shop, the opportunity came up to move into a unit at the very front of the main high street.

“When we moved around here 2 years ago it just exploded.”

Having gone from selling just 30 types of cheeses to around 120, the business started making a name for itself in the Leeds area.

While the business continues to thrive, there have always been challenges to keep Stephen on his toes.

“When Aldi was built a couple of years ago some people would say to us ‘oh that’ll be terrible for you’ and we were like ‘no actually, it’s not’ – because it’s different to what we sell. I’d actually rather have them here [on the high street] than on an industrial park because that would pull people away from here.”

Stephen notes how local businesses in the area are far more supportive of each other than people might think.

“We look out for each other – you can imagine sometimes having a small business can be quite a lonely place but actually it’s nice to compare notes. If we get stuck with something, we can always bounce it around one of the neighbouring business – usually the greengrocers or butchers – and usually we’ll get some ideas or solutions. It’s that reassurance that everyone’s in it together.”

In terms of the high street’s legacy, Stephen has noticed a shift in how people are shopping nowadays. “We have an awful lot of repeat customers. But then every week we get people in who haven’t seen us before that have either read about us or heard about us from friends – lots of word of mouth stuff. Because we don’t have much in the way of budget to do big marketing – word of mouth is great.”

As with many local businesses, owners are looking at ways they can adapt and keep up with the interest and engagement of their customers. At George & Joseph, they’ll be starting training courses for people to get a certificate accredited by the Academy of Cheese.

“It’s good fun, you learn about cheese, you learn about how it’s made, you get to try lots of cheese and there’s a little online exam at the end of day and you get a badge and a certificate if you pass.”

Alongside this, George & Joseph are participating in a local business run event called The Chapel Allerton Indie Trail. A whole host of local business are part of this ‘trail’ whereby people can collect stamps from shopping at the participating businesses. Once someone has collected seven stamps, they will be entered into a £150 prize draw.

It is hoped that this will encourage people to explore their high street and pop into places they might not have done otherwise.

Even with all of these exiting things going on and business booming, Stephen still has time to appreciate his main passion amongst the paperwork – the cheese itself.

“I’ve always liked a harder or crumbly cheese – I was fed a lot of Cheshire when I was little and I’ve still got a soft spot for Cheshire, Lancashire and Wensleydale type things.”

We joined Hendricks gin and Mr Fogg’s for an immersive advent calendar adventure this festive season.

If you’ve yet to feel the Christmas spirit, we urge you to visit Mr Fogg’s residence for your next cocktail evening. The much-loved Mr Fogg’s crew have truly turned up the festive vibes this season. Alongside Hendricks gin, they have crafted an immersive advent experience whereby an advent box containing gin-tastic treasures can be discovered in one of their six sensational sites around London.

We couldn’t wait to take part in the experience to see what our prize would be so we headed to Mr Fogg’s residence to find out. It is the ultimate venue for a festive drinks night, decorated head to toe in twinkling lights with a heavily adorned tree at the entrance and Christmas classics playing in the background. Once seated in the cosy outside area we were treated to a spread of cheeses, hams and bread before our immersive experience began.

The advent quest commences

The Mr Fogg’s and Hendrick’s curious calendar treasure hunt started with a question which had a numerical answer. Once we had cracked this code, we were escorted by the brilliant ‘Earl of Cucumbria’ to the special Christmas advent box and punched in the numbers to open it. Inside, there was a kaleidoscope of colours which unveiled a secret message for us which we conveyed to our table host in order to gain our prize. We were so pleased to open our envelope and discover complimentary cocktails, but other gifts to be won also include bottles of Hendrick’s Gin and a range of Mr Fogg’s experiences.

Festive thirst-quenchers

Their Christmas cocktail menu is a gorgeous Hendricks shakable snowglobe which lists all of their specials for the season. We couldn’t resist the warm inviting smell of spiced mulled wine* served in dainty china mugs, but would also highly recommend tipples such as the fruity Passepartout’s uncle* and the sweet treat Mayfair Mistletoe,* how can you resist a cocktail that comes with a miniature cake and lashings of cinnamon goodness?

After a fun and rewarding experience, we sat under our toasty heaters, sipping happily in beverage bliss and enjoying the infectious festive ambience that Mr Foggs does so well. Always re-inventing the wheel and jazzing up cocktail hour, Mr Fogg’s isn’t one to miss this December time if you’re looking for some extra magic from your evening out.

To partake in the Mr Foggs and Hendricks Christmas countdown, keep an eye on Mr Fogg’s instagram to discover which of the venues the advent box will be taken to next:

Did you miss it? That’s okay, keep your eyes peeled for more of their experiences in the New Year!

*The Household’s Marvellous Mulled Wine: Monkey Shoulder scotch whiskey, Drambuie and Phileas’s mulled wine.

*Passepartout’s Uncle: Hendricks gin, cucumber, raspberry syrup, lime juice, red wine and egg white.

*Mayfair Mistletoe: Hendricks gin, Roots Rakolemo liqueur, apple strudel and grapefruit.

While the humble high street is rumoured to become a thing of the past, this couldn’t seem further from the truth considering the number of people who stopped in to say hello when we met with Leeds’ independent cafe owner, Carole Taylor.

“[if I were a plant] I’d probably be a something like a Eucalyptus tree – simply because they’re really hardy, they last for years and they make people feel so good because they smell amazing.”

Part of the bustling Chapel Allerton high street Carole’s unique florist come cafe, The Perfumed Garden, is part of a wider local business community.

Having previously owned six shops, Carole and her husband, Robin, decided to sell up and go travelling. However, fate had other ideas and they ended up taking over Robin’s mother’s florist shop which needed serious modernisation.

After redesigning and developing the shop one of her corporate clients, who knew about Carole’s love for coffee, offered her a coffee machine in exchange for three large bouquets. Once the order was completed, both Carole and Robin were shocked when a van turned up to unload a professional barista machine.

It sadly wasn’t until Robin’s mother passed away that the coffee machine got some proper use. They held the wake at the shop and invited all the guests and the florist’s regulars to join. When their hired barista cancelled last minute, they both jumped behind the counter and served coffee until 7 o’clock that night.

“[all customers were saying] We should serve coffee all the time. It would be really nice in this space, it makes you feel really calm – it would be nice to have a drink.”

Carole, who doesn’t eat dairy, had long since noticed that there was a gap in the market for something special.

“Everything we do is vegan – I won’t say I’m vegan – I’m plant-based. Because there was nowhere else around here doing this, and we’re a flower and plant shop, it makes sense to serve coffees with non-dairy and have cakes made from plants – because that’s what we are.”

Flash forward 18 months and The Perfumed Garden is delighting both plant and coffee lovers alike under one roof. However, Carole has noticed the change in the local high street. “It’s not the same at all – we’ve got 3 supermarkets within a really tiny space.”

With an Aldi, a Lidl and a Tesco all on The Perfumed Garden’s doorstep, competition is hard to keep up with. But Carole, who has an infectious positive personality, see’s the brighter side of things.

“The good thing about this is it’s stopped people coming in here and spending £2.99 on a bunch because for us that’s a lot of money – to buy those materials to make that tiny bunch.”

While the shop does have a lot of loyal, repeat customers, Carole has noticed a drop in those one-off shoppers.

“People will pick a supermarket over a small indie shop.”

“Because we’re retailers ourselves, we go to other retailers because we know what situation they’re in. We know how difficult it is to get that customer to actually come through your door and part with some money.”

She does, however, think that selling the coffee has made a difference to her business.

“The good thing about the coffee for us is that most people know that they can afford a cup of tea or a coffee. So, even if they haven’t been in before they’ll come in and buy a drink then have a look around and go ‘oh, actually – you’re not very expensive.

They might not buy anything there and then we know they’re going to come back because they’ve been in and kind of broken that barrier”

Looking to the future, Carole is confident that things are looking up for local business owners.

“I do feel like this year, more than any other year, people do seem to be making more of an effort to spend their five or ten pounds in a smaller shop.

People are really starting to think ‘hang on a second, your high-street is going to look really ugly if all us little independents can’t pay our rents. So, fingers crossed, next year I’m hoping will be a cracking year.”

Cha Cha Mayfair is a new seafood bar and restaurant at Mercato Metropolitano in the Grade I St Mark’s Church, Mayfair, right in the heart of central London. With a mix of stained glass windows, grilled octopus with salsa verde and lashings of fiery margaritas…it truly is a religious experience.

A Fusion of Mediterranean Seafood and Exotic Cocktails

Cha Cha Mayfair is the latest in a series of exciting new openings for the Initiative Group and combines eclectic cocktails with fresh Mediterranean seafood. With a prime position overlooking the entirety of the food market, Cha Cha’s bar is surrounded by beautiful church windows and has an open seafood kitchen so you can watch the expert chefs at work.

New dishes from the expertly curated menu include the mouthwatering lobster and crab roll with horseradish sauce and the grilled octopus with salsa verde. Larger seafood platters to share with friends are also on offer such as ‘The Carmen’ (£25) which includes rock oysters, king prawns, lobster and langoustine as well as ‘The Sergio’ (£20) which includes scallops, rock oysters, palourde clams and blue mussels. The staff are passionate about serving up the best cocktails in town and are committed to sourcing the best spirits for each drink. We sampled the fresh Cha Cha Margarita as well as the fruity El Dorado (ideal for the vodka lover). The bar was buzzy, the drinks were zesty and the food was unbelievable. We had the best seats in the house.

A Hub of Sustainable Dining and Culinary Innovation

At its heart, Cha Cha’s ethos is defined by responsible sourcing, enforcing a zero-waste policy and being mindful of the way in which they consume products. This is also in keeping with the values of Mercato Metropolitan whose mission is focused on using fresh, artisan and sustainably sourced ingredients as much as possible. In addition to Cha Cha, the church space has two levels of food stalls and bars which are accompanied by a rooftop terrace, whilst the vaulted crypt basement hosts an authentic wine cellar with fresh cuts and world cheeses, a micro-brewery, events and cookery classes for everybody to gather, learn and share. Cha Cha Mayfair is just one of the many exciting developments in the pipeline of the Initiative Group. Over the next year, expect to see the following setting up around the country:

  • Cha Cha at Eden Locke (Edinburgh): All-day casual dining and drinks,
  • Taco by Cha Cha (London): Tacos bar and drinks

Check out our recent feature on a Genius-themed evening at TT Liquor on House of Coco.

Last week, Team Coco babe Hannah Tan-Gillies headed down to buzzing Shoreditch for a genius cocktail evening of epic proportions at TT Liquor’s Cellar Bar.

TT Liquor’s Cellar Bar – A Cocktail Wonderland

Now there’s no better way to get over the winter blues than by indulging in a few cocktails (or five), and we’ve just discovered the best place to explore some genius new cocktail combinations.

Located on Kingsland Road, TT Liquor may look like a specialist liquor store on the outside but offers plenty of surprises. Once inside, you are immediately greeted by floor-to-ceiling shelves of spirits and curiosities. Beyond that, you are led to another sitting room where you can catch a glimpse of the private cinema, and eventually down the subterranean labyrinth of TT Liquor’s atmospheric Cellar Bar.

TT Liquor’s Cellar Bar – Where History Meets Mixology Brilliance

Back in the Victorian era, TT Liquor used to be an old police station; and you can definitely feel the history of the building when cosily tucked into the dimly lit alcoves of the cellar bar. These alcoves used to be the holding cells for prisoners, but now feature handsome leather banquette seats and plenty of charm.

Here, we experienced TT Liquor’s new genius-themed cocktail menu. The entire menu is an homage to some of the greatest inventors of our time from Marvin Gaye to Madame Cliquot.

Elevate Your Cocktail Experience

The genius menu has been hailed as the Cellar Bar’s most ambitious one to date, with each cocktail individually crafted by a member of TT Liquor’s team. Some highlights include a Liberace-inspired concoction that offers a refreshing twist to a traditional whiskey sour. It is made with Bling, Balvenie 12, Montenegro, Disaronno, Cranberry, and Citrus.

The ‘Death Ray’ — which was inspired by Serbian American inventor Nikola Tesla — is another instant favourite and is TT Liquor’s version of a hot buttered rum. It is made with a special mix of Rebel Hell Rye and hot spiced butter & brown sugar.

Unforgettable Evenings at TT Liquor’s Cellar Bar

During our visit, we were also treated to one of TT Liquor’s ‘Thirsty Thursdays’ tasting sessions, which brings together groups of people looking to learn more about a specific spirit. That Thursday, we learned all about the history and different kinds of rum. We were also treated to a few funny stories from our friendly bartender Sacha and even had a few sips of ‘Diplomatico’ as well. Diplomatico is a Venezuelan dark rum that will surely leave a lasting taste sensation for rum lovers and rum novices alike.

But no matter what your poison may be, one thing was clear. The Cellar Bar at TT Liquor is the best place to enjoy an evening of fantastic cocktails with equally fantastic company.

TTLIQUOR.CO.UK

Here at House of Coco we are always on the look out for a new cocktail. Is the cocktail festive? Even better. We were introduced to the warming and perfectly sweet cocktail named ‘Flip the Don’ by the team at Don Papa.

Don Papa is a premium aged, single-island rum from the Philippines. The Philippines harbours an extraordinary rum heritage thanks to its unique climate, which yields some of the world’s best and sweetest sugar cane. The nation’s best kept rum secrets lie within the Island of Negros, where Don Papa is produced. The lush island, known locally as Sugarlandia, is home to an active volcano, Mt. Kanlaon. It’s this rich volcanic soil in the volcano’s fertile foothills that provides the ideal conditions for growing the sweet Filipino Noble Cane that gives Don Papa its distinctive flavour. This Noble Cane is harvested by hand and transported to the island’s well-worn sugar mills that have generations of expertise, before being ground to create the sweet, rich molasses that are distilled and blended to perfection within every bottle of Don Papa.

For a festive, decadent and sophisticated cocktail to serve this Christmas, try the sumptuous ‘Flip the Don’ cocktail. See below for the step by step.

Recipe…

50ml Don Papa 7-year-old

15ml Amontillado Sherry

10ml Single Cream

10ml Sugar Syrup (1:1)

1 egg

2 dashes Jerry Thomas or other aromatic bitters

Combine all the ingredients in a shaker. Dry shake, then add ice and shake hard. Fine strain into a cocktail glass and garnish with a cinnamon stick or dehydrated orange wheels for that festive feel. You have the perfect Christmas cocktail.
