As well as giving you a flavour of some of our favourite gins from around the UK, we also wanted to put the spotlight on a beautiful new pink gin: Boodles Rhubarb and Strawberry.

A modern take on an English tradition, this gin is made by infusing the classic Boodles London Dry Gin with the taste of spring-crop garden rhubarb and fresh, juicy strawberries. The result is a glorious pink gin with a sweet and tart fruity flavour.

Here are some of our favourite pink gin cocktails to round off this gin-filled weekend.

RHUBY MARTINEZ

2 oz Boodles Rhubarb & Strawberry Gin

¾ oz sweet vermouth

¼ oz maraschino liqueur

Combine all of the ingredients in a mixing glass with ice. Stir and strain into a chilled coupe glass. Garnish with a lemon twist.

RHUBARB SOUR

2 oz Boodles Rhubarb & Strawberry Gin

1 strawberry

¾ oz lemon juice

½ oz simple syrup

1 egg white

Angostura Bitters

Muddle a strawberry in the bottom of a shaker. Add all remaining ingredients except the bitters. Shake without ice, then add ice and shake some more. Strain into a chilled coupe glass. Add a few dashes of bitters on top of the cocktail.

RHUBY GIMLET

2 oz Boodles Rhubarb & Strawberry Gin

1/2 oz fresh lime juice

1/2 oz simple syrup

Combine all of the ingredients in a cocktail shaker with ice. Shake well and strain into a chilled coupe glass.

RHUBY FIZZ

1 oz Boodles Rhubarb & Strawberry Gin

¼ oz fresh lemon juice

¼ oz simple syrup

Champagne, to top

Combine gin, lemon juice and simple syrup in a cocktail shaker with ice. Shake well and strain into a chilled champagne flute or coupe. Gently top with champagne. Garnish with a rhubarb candy spiral.

LONDON LEMONADE

2 oz Boodles Rhubarb & Strawberry Gin

4 oz fresh lemonade (or Fentimans Rose Lemonade)

Combine gin and lemonade in a tall glass over ice. Stir and garnish with a strawberry.
