Coco Business Inspiration : Great Bakes

Great Bakes is an artisan baking business producing delicious bakes using simple, natural ingredients to create premium products. Their roots are with their local cafes who they have been supplying with indulgent cakes, brownies and flapjacks for a number of years. The success of their café business led to the launch of Great Bakes, they wanted more people to experience our wonderful baking.

Their range of rich, decadent brownies and their unique product, Stickyjack (think millionaires shortbread meets flapjack) are available for delivery nationwide so everyone can enjoy Great Bakes. Here at House of Coco they had us at brownies so we went along to find out more about their tasty treats…

When did you launch the brand and what was the reason behind it?
We launched in October 2015 – I have been baking cakes for local cafes for quite a while and was looking at ways for more people to enjoy my bakes. There is lots of competition out there but I had two great ideas working in my favour, firstly I created a unique product to us, Stickyjack – think Millionaires shortbread meets Flapjack, a truly awesome product. Secondly, I realized that a lot of companies deliver their brownies in a box and tell you to store it in an airtight tin so I thought why not provide the tin!

Whats your background?
Catering – I trained at Leiths a few(!) years ago and have worked in all sorts of different foodie environments, from city dining rooms to up market chalets feeding the great and the good. I have worked in party planning, recipe development and teaching cooking to kids with special needs. All my working life has been in some way food related, how lucky am I?!

How many people are involved in the company and what are their roles?
Just 2 of us, myself and my husband with a band of merry friends who help us out when things get a bit mad! Our roles are not well designated but mostly I am kitchen based, baking and developing ideas whilst dreaming up promotions and attempting to get my head around social media, whilst my husband concentrates on all the geeky stuff – he is self-taught and totally brilliant. He is the greatest right hand man happy to give anything a go.

If you could start over with the business, would you do anything differently?
I’d listen to my gut and trust my instincts more. Everyone was so generous and helpful but I got a bit bogged down with so many suggestions and so much advice. As the business has developed my confidence has grown.

What is the hardest challenge you have faced since you started the company?
We had a bit of a challenge when we used a friend to build our website and eventually had to accept that it wasn’t going to be delivered. We had to start over with someone else.

Tell us one fact about you that people wouldn’t know?
I enjoying talking about myself rather a lot, not sure there is much people don’t know!

2016 is here, where do you plan on taking the brand?
It’s all about expanding the range with new flavours and possibly a few new products.

To date, what has been the highlight since launching?
Without a doubt, exhibiting at Spirit of Christmas Fair 2016. It was an amazing experience and a huge challenge for us. It was the most amazing week and now we’ve done it we can’t wait to do it again! We met such great people and received so much positive feedback.

Which city do you feel most at home in, London, Paris or New York?
London, it’s my home!

Style means….?
Something I don’t have!

Best thing about London to you?
Without a doubt, all the fabulous places to enjoy great food, from Michelin starred glamorous venues to fashionable modern British restaurants showcasing foraged menus and brilliant eclectic markets with a glorious selection of international venues, (Brixton Market is a must). After all that eating my local common is also the best, enjoyed during my early morning run, to work off all the extra calories!

Statement shoe or statement bag?
Definitely shoes – too many pairs, too few occasions to wear them!

If you had to, what piece of clothing from your wardrobe would you wear everyday?
I have just bought a very flattering and super comfortable shirt dress which I feel really good in, I am happily wearing this every day! You know you’ve got it right when lots of people comment.

Best place for a coffee?
My Kitchen, before the day begins.

Most memorable piece of advice given to you?
Activate brain power before speaking! (You did say memorable!)

Guilty pleasure?
Spending lots of money on extravagant meals. My favourite is a weekend lunch time with great friends and lots of wine. There is something particularly indulgent about a long leisurely lunch that I really enjoy.

If you could spend 24 hours anywhere in the world, where would it be?
Antarctica – I have been so fortunate to have visited, the most awe inspiring place on our planet.

In future, how do you plan on expanding the company?
The last year has been a very exciting time and a major learning curve and we are taking it one step at a time.
