Long lunches have always been part of Ibiza’s appeal, but COYA Beach takes the ritual to another level. From guacamole prepared tableside to cocktails overlooking the sea, this is the kind of place where one leisurely meal quickly turns into an entire day by the sea.

Now, that signature experience has found a new home on Ibiza’s east coast. A luxe extension of the BLESS Hotel (located in The Site Ibiza) on the shores of Playa d’en Bossa, COYA Beach takes everything the brand is known for and stretches it across the day.

Here, lunch can be served directly to your sun lounger, afternoons drift by over sangria and sea views, dinner showcases the dishes that have made COYA a global favourite, and the evening ends with cocktails overlooking the Mediterranean.

For the full COYA experience, a handful of guestrooms and suites at BLESS Hotel have been transformed with the brand’s signature aesthetic. Rich jewel tones, wooden details, bold artwork, and subtle Peruvian-inspired touches bring the restaurant’s unmistakable character into the rooms, creating a stylish retreat that feels both luxurious and intimate. It’s a thoughtful extension of the dining experience, allowing guests to immerse themselves in the world of COYA long after the last cocktail has been poured.

Rather than offering just one restaurant, COYA Beach invites guests to experience four different ways to eat and drink, each with its own atmosphere, menu, and reason to linger a little longer. The only challenge? Deciding where to begin.

Lounger-side lunches

If holiday mode means doing as little as possible, start here. From the comfort of your beach lounger, you can order a menu of fresh, flavour-packed dishes without having to move more than a few metres from the sea. It’s effortlessly relaxed, yet every plate feels reliably satisfactory.

The experience begins with the restaurant’s signature guacamole and totopos, prepared, as per, fresh in front of you. Avocados are mashed to order with lime, coriander, chilli, and seasoning before being paired with crisp, corn chips that disappear almost as quickly as they’re served.

For something lighter, the sea bream ceviche is everything you’d expect from COYA – bright, citrusy, and beautifully fresh – while the COYA’s signature crispy chicken salad is beautiful beach-side. Opt for the grilled chicken wrap (with ají amarillo, charred avocado and lime) if you fancy something a little more substantial; packed with light spice and flavour, it also won’t leave you feeling too full for an afternoon in the sunshine.

Wash it all down with coconut water served inside the fruit itself, share a pitcher of fruity sangria, and don’t miss the giant platter of chilled watermelon, which obviously tastes even sweeter with the Mediterranean sparkling in the background. Those with a real sweet tooth can enjoy a coconut sundae or crispy churros with chocolate sauce.

Beach club dining

It is COYA Beach, after all. Move just moments from the sand to the beach club and the menu expands into something made for long, leisurely afternoons.

The watermelon and feta salad is as refreshing as it is colourful, while beautifully fresh red prawns and perfectly crisp calamari showcase the quality of the seafood. If you’re after something heartier, the steak is cooked beautifully – tender, juicy, and served alongside vibrant seasonal salads that balance the richer dishes perfectly.

Cocktails arrive ice cold, DJs provide an upbeat yet relaxed soundtrack, and there’s no pressure to rush anywhere. This is the sort of place where one course effortlessly turns into three – and the view is unbeatable.

The desserts are the same as the beach menu, with the addition of a chocolate mousse which is deep, dark and velvety – served with tonka bean ice cream; it’s the perfect end to a meal full of fresh flavours.

A very COYA dinner

As day turns to dusk, COYA Beach settles into the dinner service that has made the restaurant group a global favourite. The menu is reassuringly familiar for anyone who’s visited one of its sister venues, bringing together the signature Peruvian dishes that have earned COYA its loyal following, all served with uninterrupted views over Cala Nova.

A meal here should begin with the Gran Ceviches y Tiraditos COYA, a colourful selection of citrus-marinated fish and seafood that showcases the freshness of the ingredients and the bold, punchy flavours the restaurant is known for. If you’re feeling particularly indulgent, elevate the dish with a spoonful of Oscietra caviar, adding an extra layer of luxury to an already standout starter.

Dining room

From there, the baked Chilean sea bass is an absolute must-order. Cooked until delicately flaky and served with miso, bomba rice, chilli-lime butter, and sweetcorn, it’s one of COYA’s most iconic dishes for good reason – comforting, beautifully balanced, and packed with flavour.

The grill is equally impressive. The baby chicken, marinated with smoky ají panca, coriander, and lemon, is beautifully succulent, while the Ibérico pork pairs rich, tender meat with salsa anticuchera and sweet, caramelised pineapple. Seafood lovers shouldn’t overlook the fire-grilled carabineros (red prawns), finished simply with citrus, sea salt, and chilli to let the quality of the shellfish shine.

For those craving red meat, the spicy beef fillet delivers exactly the right amount of heat, complemented by crispy shallots and pickled chilli, while the beautifully marbled Wagyu rib-eye arrives with chimichurri, guasacaca, and adobo, melting in the mouth with every bite.

Then come the desserts, which are every bit as memorable as the savoury courses. The Tres Leches is a showstopper, combining salted dulce de leche with vanilla ice cream, while the Andean chocolate mousse is rich without feeling overly heavy, finished with coffee and tonka bean ice cream for a sophisticated finale. If you somehow still have room after the feast, these sweet endings are more than worth it – before you roll back to your room (luckily the COYA suites are only a few steps away).
