Elevate Your Evenings with these Winter Cocktails

Winter Old Fashioned with Never Say Die Bourbon

Winter cocktail #1 Winter Old Fashioned with Never Say Die Bourbon

A seasonal twist on a timeless classic, the Winter Old Fashioned is layered with spice, citrus, and the bold warmth of Never Say Die Small Batch bourbon. Whether you’re gathering with friends, winding down by the fire, or simply looking to elevate a quiet night at home, this winter cocktail captures the essence of the season: rich, aromatic, and wonderfully inviting. With a homemade winter syrup infused with cinnamon, cloves, and orange peel, every sip feels like a celebration of cold nights and cosy moments. Here’s how to make it your new Winter ritual:

Ingredients:

  • 50ml Never Say Die Small Batch bourbon
  • 10ml ‘Winter Syrup’ (available to buy here, or recipe below)
  • 2 dashes Angostura Bitters

Add all ingredients to a rocks glass and fill with cubed ice or an ice block. Stir until well chilled and diluted, top up the ice if needed and garnish with a smouldering cinnamon stick.

To make your winter syrup:

If you fancy making your own winter syrup, you’ll need one cinnamon stick, 5 cloves, 2 strips of orange peel, 1 cup demerara sugar, and a 1/2 cup of water

Break the cinnamon stick up and add it and the cloves to a small frying pan and heat gently until the aroma of the spices becomes strong. Add the sugar, water and orange peel and bring to the boil while stirring to dissolve the sugar. Once all the sugar is dissolved and the liquid has come to a boil, strain the spices and peel out of the liquid, and allow it to cool before bottling. To extend the shelf life of the syrup, add 25ml of Never Say Die.

Tart London’s Foraged Winter Punch

Keep the spirit of folklore alive with this woodland-inspired punch. Using a bottle of Wild by Tart’s limited edition Bathtub Gin, this warm winter cocktail punch is delightfully cosy. It can be made in large batches, making it perfect for Winter-time hosting this festive season.

Winter Cocktail #2 Tart London's Foraged winter punch with Wild by Tart Bathtub Gin

Ingredients:

  • 250ml Tart x Bathtub Gin
  • 150ml spiced sloe & bay syrup (recipe below)
  • 50ml fresh lemon juice
  • 500ml cloudy cider
  • 250ml sparkling apple juice or soda water

To make your sloe & bay syrup:

Step 1: Forage & Freeze Your Sloes
Seek out Sloe blackthorn hedges, pluck the ripe purple berries, and freeze overnight – a simple alchemy that coaxes out their deep ruby juice.

Step 2: Make Spiced Sloe & Bay Syrup
Simmer sloes with sugar, bay, cinnamon, and cloves until the kitchen is fragrant and the syrup glows red as embers. Strain and cool.

To make your winter punch:

Method: Warm the cider and syrup gently, add Bathtub Gin and lemon juice off the heat. Pour into a punch bowl and serve steaming in mugs by the fire.
