As a devoted fan of pumpkin, I was delighted to see Hokkaido pumpkin on the menu, its natural sweetness perfectly balanced and deeply satisfying. Equally impressive were the seabass, delicate and tender, paired with courgettes and peppery watercress, and the raw Rossi prawn, set atop shimmering sea jelly and crowned with smoked perch roe, each creation a masterful demonstration of imagination, precision, and culinary artistry.
