There’s something exotic about a blazing summer evening in London, and there’s no better place to soak in the City light than Madison’s rooftop, especially when paired with a sun setting above St Paul’s and a limited edition cocktail menu inspired by Barbadian rum.

Mount Gay has teamed up with Madison Rooftop to celebrate the Bajan way, adding a touch of the Caribbean to the London skyline with the Barbados-inspired ‘Time Well Spent’ pop-up bar. Effortlessly instagrammable with a delicious concoction of rum based classic cocktails to boot, an evening spent sipping amidst the buzz and bustle of friends and City folk is time well spent, after all.

Bar Manager Eduard Balan (formerly Aqua Shard) is the brains behind Mount Gay’s exclusive cocktail menu and each provides a unique twist on a well-known favourites.

We began with the Caribbean Aperitivo, a sweet and light concoction laced with homemade pineapple kombucha, banana liquor and coconut water. Next came the roasted Pina Colada, featuring Mount Gay Black Barrel, coco lopez, rice water and smoked pineapple. The effect is a creamy tropical taste which holds none of the often thick and overly sugary components of your average classic.

Next on the menu is the Strawberry Mojito, concocted with Mount Gay Black Barrel, supasawa strawberry syrup, mint tincture and topped with water. Top it off with the incredible Barrel Aged Rum Old Fashioned made using Mount Gay XO and you’ve got a fresh, de-fizzed blend of strawberry deliciousness (we had two!).

Last on the menu and not for the faint hearted, the Barrel Aged Rum Old Fashioned infuses MountGay XO, with sugarcane syrup and bitters. Aged in a Port oak barrel, the effect is strong but smooth with a pleasantly smoky aftertaste. For seasoned spirit drinkers who enjoy a taste of the good stuff, this one’s for you! Don’t forget to get your snaps in of St Paul’s – there’s no view quite like this one!

Live until September, the ‘Time Well Spent’ terrace is the ideal spot to steal a few last summer larks with friends, over some truly top class bevs.
