If you should wander on down the whitewashed streets of Kensington, you’ll no doubt stumble across the beautiful 100 Queen’s Gate Hotel. Contained therein is Botanica, a tearoom set within a plant draped atrium dripping with cherry blossom and lime. Step inside their redolent quarters and brace yourself for a journey of the senses as part of their unique collaboration with luxury perfumer, Floris, London. Whilst flavour will always be the most important aspect of any afternoon tea experience, ‘Scentsation’ broadens our sensory horizons, stimulating scent, sights, textures and interactions, creating a truly unique experience.

Rather than rely solely on a gilded stand adorned with sumptuous cakes and delicious goodies that you cannot wait to gobble up with edacious glee (although there are still plenty of those on offer here), ‘Scentsation’ draws you in with intoxicating fragrance, a heady bouquet of cherry blossom and lime fills the air as you approach your table. If you’re not wholly keen on floral flavours then, please, do not fear. The floral notes of what you are about to be served are so nuanced, so flawlessly blended and intertwined with an abundance of different flavours, textures and temperatures, that there is nothing overbearing or overly flowery to be concerned about. The absolute genius of this experience is that the flavours are presented in such a gentle way before you are provided with options to enhance them, add an umami edge, or additional honeyed sweetness. No two experiences are the same, and there are no guidelines other than to, well, to create whatever pleases your senses.

Heading in to Botanica, you are greeted with flourishes of blushing blossoms and verdant, lush foliage. The surroundings, resplendent, yet cosy, are fresh and vibrant whilst retaining the opulence and grandeur of the hotel itself. Upon being seated, you will find a handy pairing guide tucked inside your napkin, containing gentle advice as to how to pair up your afternoon treats with the selection of additional toppings provided. Each table is furnished with a tray of toppings varying from sweet to savoury, light to umami, allowing you to create your own, truly bespoke experience. The thyme, pink peppercorn and sumac topping paired beautifully with the lemon desserts, the golden popping candy added an explosive surprise to the lime dome, the lavender honey (my personal favourite) added a delectable edge to the buttery madeleine, and the Himalayan salted dark chocolate was perfect with just about everything. There are no rules here, you are free to experiment and scatter toppings as you please, finding your own preference as you go. I even added a little thyme, pink peppercorn and sumac to one of my scones, along with clotted cream and a little jam. Whilst it’s not something I would have normally paired up at home, the freedom to experiment entices you to try flavour combinations you wouldn’t normally be inclined to throw together.

The afternoon tea itself comprises of three layers of treats: savoury sandwiches and flatbreads, featuring silky smoked salmon and spiced chicken, cakes and pastries, including the silky Buddha’s hand madeleine and fluffy, croquelin choux, crowned with a tier of scones accompanied by velvety clotted cream and zingy fruit jams. The teas, provided by the fabulous Whittard of London, include their famous Sakura blend (green tea and cheery) to compliment the scones, and Keemun, the perfect accompaniment for the lemon and lime notes of the baked desserts. If you’ve something to celebrate (or even if you haven’t), you can of course upgrade to the champagne option for an effervescent alternative.

For those wishing to elevate their experience, 100 Queen’s Gate Hotel are also offering an exclusive Floris hotel package. Alongside the ‘Scentsation’ Afternoon Tea, guests can enjoy an overnight stay in one of the hotel’s sumptuous suites, which also includes a complimentary full-size bottle of one of Floris London’s iconic fragrances. A VIP version of the Floris package will also be available to book, with the added element of a stay in the luxurious Queen’s Gate Suite, which boasts a private entrance with direct street access and up to four private bedrooms, alongside a behind the scenes tour of Floris’ Jermyn Street store, guided by either the Bespoke Perfumer or Perfumery Director. Following the tour, guests will have the opportunity to create a bespoke fragrance, choosing from a wide selection of fine fragrance bases and notes, the perfumer will slowly create a scent that is truly personalised to you, adding new accords to complement the guest’s taste until the unique fragrance is complete.

This weekend is Super Bowl Sunday. Traditionally, it was an American celebration, but with American Football growing in popularity Mexican food brand Old El Paso want to show you how to throw the infamous Super Bowl Party in style.

Why not try half-time Halloumi Fajitas? Recipe below:

Ingredients: Halloumi, veg oil, mixed peppers, black beans, sour cream, jalapeños, avocado slices, Old El Paso Crispy Crumb Seasoning, Old El Paso Flour Tortillas, Old El Paso Salsa.

Method: Slice halloumi into 1cm thick slices and mix with veg oil and Old El Paso Crispy Crumb Seasoning, to coat. Pan fry halloumi alongside peppers until lightly golden and crispy on each side. Microwave Old El Paso Soft Flour Tortillas 35-40 seconds. Lay the crispy halloumi on the warm flour tortillas; add black beans, avocado and cooling sour cream. For a real kick add jalapenos and finish with Old El Paso Salsa. Serve

Classic Pink Gin, with Angostura

The Pink Gin Cocktail came to life in a perfect storm of elegance, high-seas and life or death drama. The simple, yet potent drink is traditionally a mixture of Angostura®aromatic bitters with gin, and modern variations include adding tonic, prosecco or summer berries. There are so many possible flavours, that Angostura have launched a summer long campaign, working alongside some of the most delicious Gin brands so that you can enjoy all the variations at home.

Recipe: Classic Pink Gin
60 ml gin, 2 dashes Angostura®aromatic bitters.
In a mixing glass, stir the ingredients with ice to chill. Strain into a small old fashioned glass and serve.

The King of Soho, Soho Pink Fizz

Fresh strawberry and floral chamomile lead on a wave of soft juniper with a suggestion of citrus in the Variorum Pink Gin.

Recipe: Soho Pink Fizz
20ml King of Soho Variorum Pink Gin, 10ml Blue Curaçao, Dash Orange bitters, Topped with Rosé Champagne.
Mix the first three ingredients in a shaker with ice and fine strain into a chilled Champagne flute. Top with the rosé Champagne by pouring gently down a bar spoon. Garnish which a slice of strawberry and serve.

50ml Hayman’s Old Tom Gin, 15ml Sweet Rosso Vermouth, 15ml dry Vermouth, 5ml Maraschino Cherry Liqueur, 1 dash Angostura Bitters, 1 dash Orange Bitters.
Chill a martini glass, stir all the ingredients in a mixing glass or tin, strain into chilled martini glass, garnish with a twist of orange peel or a Maraschino cherry and serve.

Caorunn Highland Strength

Ahead of their upcoming 10-year-anniversary and in celebration of World Gin Day, Caorunn are launching their highest strength gin yet: Caorunn Highland Strength.

Crafted at Balmenach Distillery in the Scottish Highlands, Gin Master Simon Buley has expertly handcrafted Caorunn Highland Strength at a bold 54% abv to enhance the traditional Scottish botanicals that distinguish Caorunn Gin.

This stronger version of Caorunn Gin utilises Scotland’s unique natural resources by infusing five locally foraged Celtic botanicals and six traditional gin botanicals in their Copper Berry Chamber to create a flavour that deserves to be savoured.

Hayman’s Gin Liqueur

Hayman’s of London has launched a Gin Liqueur, with the recipe adding just a touch of sugar to the classic Hayman’s blend of ten botanicals to create a juniper-forward gin with the sweetness of a liqueur.

Hayman’s Gin Liqueur developed something of a cult following in warm weather markets such as Spain, where it proved to be a refreshing serve under the hot sun – most often enjoyed neat over ice or as a play on a classic gin and tonic.

We entered the bustling hotel’s foyer on a Friday lunchtime, it was filled with a mixture of foreign travellers, businessmen and women, families on holiday, day trippers, residents, and diners, all enjoying the beautiful surroundings of The Grand, York and all that the city has to offer.

After being directed to Hudsons, the hotel’s fine dining 3AA rosette restaurant, we were greeted with smiles from the restaurant manager and were and shown to our table for afternoon tea.

Our host introduced us to the luxury tea box by Newby Tea, a British tea brand who sources only the finest teas from across the world. We were given a tour of the teas through each individual scent, from Earl Grey and Cinnamon Teas to Oolong and Peppermint Teas; this wasn’t just for our enjoyment as every guest was taken through this process before ordering the perfect tea. We opted for The Grand’s own Hudsons Breakfast Blend Tea, which was full-bodied and malty, and an Elderflower and Lemon infusion, which gave a punchy lemon flavour and left an elderberry taste in the mouth. The tea arrived with a personal timer, to give the perfect brew of 3-minutes and 5-minutes!

The afternoon tea menu read:

Chilled tomato tea – smoked sea trout with red onion and chives on brioche – pickled cucumber and dill on sesame sourdough – Victorian egg mayonnaise toast sandwich with egg yolk fudge and cresses – scones selection – pistachio cake with chocolate cream and strawberry – caramel gold choux bun – banana bread with hazelnut and truffle – cheese trolley (supplement)

An amuse bouche of chilled tomato tea was offered to get the taste buds working and it did just that. The intense flavour of the fresh clean tomato was undeniably a hit with all the guests enjoying afternoon tea by Hudsons at The Grand, York.

The sandwiches were next to arrive, three sandwiches per guest, and it was explained in which order to eat them to give maximum taste on the pallet. Therefore we enjoyed the pickled cucumber first which was light and cleansing, the trout second due to its protein filled goodness, and finally the heavier, stronger flavoured egg mayonnaise. The most unusual of the three was the egg mayonnaise sandwich as this was an exact replica of how Queen Victoria enjoyed her egg mayonnaise sandwiches, with a triple layer of bread; the centre slice was lightly toasted and then placed between two slices of white bread and plenty of egg mayonnaise. If it was good enough for Queen Victoria it was surely good enough for #TeamCoco. All three sandwiches were completely different from any other afternoon tea we had previously experienced.

Then it was onto the homemade scones, both fruit and plain, served with raspberry and strawberry jam and clotted cream, these were exactly as you would expect; warm, fresh, and perfectly baked.

Cakes and sweet treats were next on the menu, and again we were talked through the correct order in which to devour them, starting with the pistachio cake, followed by the banana bread and ending with the choux bun.

Being a fine dining experience these cakes and treats were extremely rich, just enough to cater to any sweet tooth, and the choux bun was delicately sprinkled with gold leaf – for that extra touch of indulgence.

The final part of afternoon tea by Hudsons at The Grand, York was an optional supplementary cheese course. We choose cheese for just one person, as we were quite full from the previous four courses.

A cheese plate with a selection of British cheeses was presented alongside locally produced biscuits, housemade chutney, and fresh grapes. All-in-all it was the perfect ending to a perfect afternoon tea.

Homebaked is a community bakery in Anfield, Liverpool (opposite Liverpool Football Club), which recently won 10 medals (one gold, six silver and three bronze) in this year’s British Pie Awards. That’s a serious amount of awards at the industry’s leading awards ceremony.

The world-famous Harry’s Bar in London has recently launched its Piccolli Dolci menu just in time for Mother’s Day. It’s an Italian take on traditional afternoon tea, made up of five miniature desserts served with a choice of tea or a glass of bubbles. Desserts include: Gelato Cannolini, Chocolate & Pistachio Sundae, Salted Caramel Tiramisu, Peach Doughnut, and Harry’s Toadstool (Mascarpone cream, fresh raspberry, and chocolate brownie). Delish!

ERST Restaurant, Manchester

The team behind Manchester’s Trove are pleased to announce the launch of Erst wine bar and restaurant. The restaurant will serve simple, delicious food from the grill and will boast one of Manchester’s most inspired selections of craft beers and natural wines.

The newest addition to the thriving Ancoats area of Manchester, Co-owners Will Sutton, Patrick Withington, Katy Saide and Marcus Saide chose the name ‘Erst’ as reference to time “formerly” or “long ago” leading into the choices of wine, beer and use of fire for cooking.
The wine list showcases vintages selected from small producers from around the world, who care for the fruit and the land it’s grown on, using organic and often biodynamic practices. From the grill comes naturally leavened flatbreads made in house served with whipped lardo, grilled whole mackerel, monk’s beard and wild garlic aioli. The Bar menu includes smoked almonds, wild fennel saucisson, along with anchovy za’atar and Bergamot – perfect with a glass of crisp Augustiner lager.

Bakeoff star Ruby Bhogal

Bake Off star Ruby Bhogal has created a very special recipe working with the United Nation’s World Food Programme and Tilda to ‘Help Mums Together’.

Ruby’s ‘Mama B’s Chicken Biryani’ is inspired by her own mother, her cooking inspiration and the person she thanks for igniting her desire to cook from a young age.
