Embarking on a Christmas escapade, I found myself immersed in the enchanting realm of The Nutcracker at Bellagio Hotel, an experience curated by the brilliant minds of the Conservatory team. Lea Jonic, a vital member of the seasonal installation crew, provided insight into the meticulous artistry that transforms the 14,000-square-foot Botanical Gardens into a magical spectacle throughout the seasons. What stood before me was not just a holiday extravaganza but a year-round celebration of nature’s ever-changing beauty.

Lea shared the Conservatory’s commitment to sustainability, emphasizing that each season brings forth a new canvas. The expansive oasis becomes a showcase of inspiring sights, sounds, scents, and colours. With the seasons, the talented Conservatory team replants and repurposes living plant material, aligning with their dedication to both artistry and Mother Nature. The result is an ever-evolving masterpiece.

The crown jewel of my visit was The Nutcracker display, featuring the awe-inspiring Mighty Mouse King, a towering 30-foot figure crafted from diverse botanical materials. This larger-than-life masterpiece engaged in a pivotal battle with The Nutcracker Prince, captivating the imaginations of the 20,000 visitors who flocked daily to witness the grand story unfold.

From the majestic presence of four towering Nutcracker Drummers to the display of exquisite crystal chandeliers and 40 freshly adorned holiday trees aglow with over 125,000 lights, the Conservatory Holiday display was truly a spectacle to behold.

While my personal ice-skating prowess remains untested, I discovered an equally enchanting experience at the Boulevard Pool at The Cosmopolitan. Nestled high above The Las Vegas Strip, this holiday season hotspot transforms into a winter wonderland that goes beyond the ordinary. As the sun dipped below the horizon, I cozied up by the fire, crafting delightful s’mores, and indulged in the most magical view of the Las Vegas Strip.

For those seeking a festive touch, the Ice Rink offers a must-do activity in town. The 4,200 square feet of real ice invites skaters to glide beneath the glittering lights of Las Vegas, creating an atmosphere nothing short of magical. While staff stood ready to take orders from the brilliantly festive cocktail menu, my choice of a hot chocolate by the fire proved to be the perfect accompaniment.

Each holiday season, The Ice Rink at The Cosmopolitan not only provides an opportunity for skating enthusiasts to revel in the joy of gliding across the ice but also welcomes those who prefer to simply bask in the festive ambiance. Named one of USA Today’s 10 Best Ice Skating Rinks in North America, this winter wonderland ensures that the holiday spirit is alive and well high above the iconic Las Vegas Strip.

The Sphere

Nestled among the iconic landmarks of the Las Vegas Strip, The Sphere stands as a testament to architectural innovation and futuristic design. Even before stepping inside its immersive wonders, the structure itself is awe-inspiring, adding a new dimension to the city’s skyline. With its futuristic facade and distinctive presence, The Sphere captures attention from every angle, making it a visual spectacle that seamlessly blends with the glittering lights of the Las Vegas night.

As I approached The Sphere, its colossal presence hinted at the extraordinary experiences that awaited within. The sheer magnitude of the structure became even more apparent when I realised that this architectural marvel is visible from various vantage points across the city. In fact, even as I landed at the airport, The Sphere’s futuristic silhouette welcomed me to Las Vegas, setting the stage for the adventure that awaited.

Navigating The Sphere’s immersive wonders, I embarked on a captivating journey with “Postcard from Earth,” a sci-fi journey that propelled me deep into the uncharted territories of our collective future.

Indulging my festive spirit in Las Vegas extended beyond the typical holiday activities to a realm where shopping became an art form. While my shopping list may have exclusively catered to self-indulgence—because, let’s face it, who can resist the allure of treating oneself during the holidays—Las Vegas North Premium Outlets® became my ultimate retail haven.

As I strolled through this airy, outdoor village-styled centre, the sheer variety of over 175 designer and name-brand retailers elicited a twinkle of delight in my eyes. Savings up to 65% every day on renowned brands like Kate Spade New York, Michael Kors, Pandora, Tory Burch, Coach, Nike, lululemon, and Burberry turned my shopping spree into a festive adventure.

While not inherently Christmas-themed, the enchanting collection of perspective-changing rooms, enthralling installations, and spellbinding images provided a unique and captivating experience that resonated with the spirit of the season.

The museum is not just a visual feast but an educational journey into the science and artistry behind illusions. Each exhibit is carefully crafted to teach you that things are not always what they seem, emphasizing the fascinating ways our brains interpret visual information.

With interactive displays, mind-boggling challenges, and a whimsical atmosphere, the Museum of Illusions offers an escape into a realm where the boundaries of reality blur, leaving visitors with a newfound appreciation for the art of illusion. It’s a place where laughter, surprise, and discovery converge, making it a must-visit destination for those seeking a break from the ordinary and an immersive adventure into the extraordinary.

Holiday Magic Beyond the Strip: Year-Round Delights in Las Vegas

The futuristic allure of The Sphere, the retail haven at North Premium Outlets, and the spellbinding illusions at the Museum of Illusions added layers of wonder to this festive adventure.

As I bid adieu to the city that never sleeps, I carry with me the knowledge that the best things to do in Las Vegas are not confined to a single season; they are timeless treasures waiting to be discovered year-round. Vegas, with its ever-evolving charm, promises a playground of endless delights for the curious soul.

After what had been somewhat of a hectic year, the invitation to visit the Polurrian on the Lizard on the Cornish coast was swiftly taken up. It promised a relaxing pre-Christmas sojourn which was very much needed. 

This contemporary Cornish retreat in a spectacular clifftop setting was over four hours from where I lived, but the lure of the Cornish coastline and some serious R&R made me not hesitate to say yes to the Polurrian on the Lizard. Set in 12 acres of mature cliff-top gardens, this luxury seaside hotel offers the most exceptional far-reaching views across Mount’s Bay and the Atlantic Ocean and even on a slightly overcast November day, it makes for a truly mesmerising view.

Nestled on the Lizard peninsula, the hotel sits on the most south-westerly point of England on the western side of the peninsula, just outside of the sleepy fishing village of Mullion along the South West Coastal Path. Venture to the back of the hotel past the pretty gardens, and guests can wander down to Polurrian Cove, a secluded beach which is one of the best in this region.

As one of the oldest hotels on the peninsula, the Polurrian on the Lizard attracts both holiday makers and locals who use the spa and restaurant facilities. It has an impressive heritage and has previously welcomed illustrious guests such as Clark Gable in the distant past. 

One of its standout features is the expansive and contemporary conservatory which has floor-to-ceiling windows which invite you to gaze upon the stunning coastline whilst enjoying lunch, dinner or even afternoon tea. The vibe is very much laidback but luxurious and it’s really easy to feel completely at home at the Polurrian.

We stayed at the brand new Island Suite at the Polurrian on the Lizard, which was located at the back of the main building with two separate entrances, three bedrooms and one incredible hot tub which almost made it impossible to never leave!

This new suite is suitable for friends, couples, families and comes not only with a fabulous hot tub to while away the hours, but your own unique transportation to boot. This came in the shape of a ‘NoSmoke’ electric buggy which is a fun yet sustainable way of exploring this gorgeous area of Cornwall. It’s very much ‘on road’ and you can drive this vintage style buggy out of the grounds and into the nearby village and down to the beach.

The suite has a separate kitchenette which is ideal if you want to do some light cooking or meal prep either before or after a serious day’s sightseeing. Having flexible accommodation is really helpful as is having two bathrooms and a separate toilet, especially if there’s a group staying with you. Ideal for those bringing pups or children, the hotel can provide guests with all those much-needed equipped essentials like changing mats, nappy bins and bed guards, should you need them.

Whilst it’s not aimed at the super luxurious market, the aesthetics are rustic yet simple and it makes for a really comfortable stay. 

The main draw is the hot tub which we took advantage of every day and night during our stay. It was the perfect place to retreat to with a glass of fizz after our long journey and got us in the mood for dinner which was served at the hotel’s Polurrian restaurant. The décor embodies a classy aesthetic with sleek lines, muted colour palettes, and luxurious textures giving it a real modern meets vintage vibe that is sophisticated yet laid back.

A simple, but delicious menu, guests can choose from starters like a terrine, soup or mussels for a starter, steak, fish & chips, turkey or similar for a main course and a lovely selection of desserts which includes a sumptuous strawberry cheesecake. 

Both dinner and breakfast were served up by friendly and efficient staff who clearly took pride in their work. The staff throughout our stay were nothing short of superb and made every effort to ensure our trip was nothing short of special.

Cocktail fans will love the chilled vibes of the Vista Lounge which serves up an impressive selection of delicious cocktails and wines. 

As this trip was all about rest and relaxation on the Cornish coast, we simply had to take advantage of the hotel’s spa facilities which includes a 30 ft indoor swimming pool and hot tub. We also indulged in a spa treatment each at the brilliant Elemis spa which included one of the best facials that I have ever had. The therapists took every care and my skin looked the best it had looked in ages. The Island Suite also has Elemis toiletries for guests to use for the duration of their stay.

For a pre or post Christmas treat, the Polurrian on the Cornish coast offers a real oasis of calm and the Island Suite is a fantastic option to enjoy a seriously chilled out break with 24 hour access to your own personal hot tub at any time you want to use it.

Music-themed hotels are always high on my hotel ‘must-visit’ list and after a fantastic year of visiting music-themed hotels thrughout the world, I was beyond excited to stay at this luxury hotel in the heart of Rome.

This enchanting city is a perennial favourite for so many and it was high on my list of cities to visit in Europe this year and being a music and travel journalist, this certainly ticked all the boxes I’d want in a hotel and then some!

The Pavilions Rome, The First Musica offers a five star contemporary experience and whilst it’s not as music-orientated as other similar hotels, what it does offer is exceptional service, elegant design and some pretty incredible views of Rome’s river Tiber and beyond.

Celebrating a heady fusion of art, music and gastronomy, the Pavilions Rome, The First Musica is part of Pavilions Hotel & Resorts and despite it having a very individual feel, you can see the trademark attention to detail and finishing touches that is synonymous with this hotel group.

Along with its two sister hotels in Rome, The First Roma Arte and The First Roma Dolce, the three hotels are collectively being labelled The First Roma group.

Located on the banks of the Tiber in the elegant Prati neighbourhood, the First Musica makes a huge impression as you wander down the street. The contemporary cubist design is in a delicious juxtaposition from the age-old palazzos that surround it. It’s in a fantastic spot and is only a short walk to some of Rome’s best attractions including the Trevi fountain.

Originally designed by acclaimed Roman architect Mario Docci, the building has been thoughtfully elevated by tweaks undertaken by Studio Marincola, and the hotel has a bespoke piano in the lobby with an eighties paint-splattered vibe, music-themed coffee table books, floor-to-ceiling windows, Loro Piana fabrics and an impressive selection of modern artwork throughout the hotel. 

It has a real intimate feel with only 24 rooms and suites. Ours had the aforementioned floor-to-ceiling windows on two sides of the room which meant the room was flooded with light giving it a really spacious feel. The decor was as elegant inside the room as it was in the shared areas with mirrored wardrobes, sleek white furniture, rich textures and a sumptuous marble bathroom with a walk-in rain shower giving it an art-deco fused with modernity vibe.

Little touches that reflect the music element of the hotel included Bang & Olufsen speakers so you never need to be without music even whilst washing your hair. Music can also be found at the DJ-soundtracked rooftop bar Alto which has an impressive wine and cocktail list.

Whilst we didn’t eat at the hotel for anything other than breakfast, guests can head on up to the fifth floor to ALTO where they can try innovative dishes with a Mediterranean twist like linguine with shrimp and bell peppers. The breakfast was somewhat of a ceremonial affair with both a continental and a cooked option available. Friendly staff bought a never-ending selection of dishes which included cereal, pastries, fruit, as well as a cooked option such as eggs benedict, cold cuts, pancakes and more.

A relatively new hotel, the facilities are well-thought out but at the time of visit, there were no spa facilities, but a subterranean spa with an indoor pool and wellness area is in the works for early 2024.

The enchanting city of Rome is a true masterpiece and the First Musica hotel deserves a similar accolade too and is an ideal hotel for both foodies and lovers of culture.

The word “Malliouhana” itself carries historical weight, derived from the Arawak language spoken by the indigenous people of the Caribbean. It translates to “arrow-shaped sea serpent,” paying homage to the island’s indigenous roots. The romantic story told by resident Rum Pairing’s connoisseur and long-standing employee, Chesney, explains Roydon originally built this hotel for his wife to live in. The story goes that Roydon fell in love with the island and told his wife, “I’m going to build you a villa, and you can invite your five friends to keep the lights on. “

Originally opening its doors in 1984, Malliouhana quickly became a symbol of excellence in Caribbean hospitality. The architecture, a blend of Mediterranean aesthetics and Caribbean vibrancy, reflects the island’s colonial past while embracing its indigenous heritage.
Over the years, Malliouhana has witnessed the ebb and flow of the Caribbean’s cultural currents, adapting and evolving while maintaining its commitment to providing guests with an unparalleled experience.

The onsite restaurant, Celeste, becomes a living celebration of the island’s culinary traditions, paying homage to the indigenous roots that inspired the hotel’s name.
If I had the option to have one of everything on the evening menu, I would – with a variety of dishes to choose from. Still, the chef’s kiss has to be the Table-side Ceviche, which packs a spicy kick with lime, jalapeño, and cilantro that dances around the mouth, awakening the senses.
The same restaurant houses breakfast with a relaxing sea view and exceptional service. Choose from fresh avocado toast or smoked salmon and eggs, and if you are feeling extra hungry, the Johnny Cakes and pulled pork looked like a triumph.


Wellness and Continuity:

The Spa at Malliouhana, a sanctuary of modern wellness, seamlessly blends contemporary luxury with the healing traditions of the Caribbean’s indigenous people. Drawing inspiration from the island’s rich history, the spa offers rejuvenating treatments that go beyond the physical, creating a holistic wellness experience. As the morning sun paints the sky in hues of pastel, guests are invited to commence their day with a tranquil yoga session. The gentle rustle of palm leaves and the rhythmic sound of the Caribbean waves provide the backdrop to a session that harmonises mind, body, and spirit. Anguilla Unveiled: A Symphony of History, Charm, and Beauty

Nestled in the heart of the cerulean Caribbean Sea, Anguilla is a bewitching gem that beckons travellers with its pristine beaches, vibrant culture, and a history that whispers tales of resilience and triumph. This slender slice of paradise, just 16 miles long and 3 miles wide, holds within its embrace a treasure trove of experiences that captivate the soul and leave an indelible mark on the wandering heart. Join me in this special three-part feature as I share my experience of Anguilla.

Embarking on the journey from the North of England, my chosen route involved a swift flight from Manchester to Paris, followed by another to Saint Martin. The final leg included a brief but scenic boat ride to the enchanting shores of Anguilla. Stepping onto the vibrant Calypso Charters boat, the weariness of travel instantly dissolved in the face of the islands’ breathtaking beauty. The rhythmic waves, kissed by the Caribbean sun, ushered in a sense of tranquility that effortlessly banished any lingering jet lag. A sip of the invigorating rum punch, served with the warm hospitality that defines the region, further marked the beginning of a journey where refreshment met the allure of the tropics.

A Tapestry of History:

Anguilla’s history is as rich and diverse as the hues of its crystalline waters. The Arawak and Carib Indians were the first to tread upon its shores, leaving behind the echoes of their ancient civilisations. Centuries later, the island became a battleground for colonial powers, passing through the hands of the French, Spanish, and English before finding its place as a British Overseas Territory, something the islanders I spoke with are incredibly proud of.
The echoes of this tumultuous history can still be heard in the charming architecture that graces the island. The Old Valley, the historical heart of Anguilla, is a quaint testament to the island’s past, with its brightly coloured houses and cobblestone streets that seem to whisper tales of times gone by. The best way to get about is by Moke, and that we did! What a thrill it was to whip around the island in these open-side buggies.


Beaches of Dreams:

Anguilla’s beaches are nothing short of a dreamscape. Powder-soft sands stretch for miles, caressed by gentle waves that paint the shore in hues of turquoise and azure. Shoal Bay, Meads Bay, and Rendezvous Bay are but a few names that conjure images of a James Bond paradise, inviting visitors to lose themselves in the rhythm of the sea.
Each beach is a canvas painted with the strokes of a master artist, where the sunsets are a symphony of colours that linger in the memory long after leaving the island. Whether you seek solitude or vibrant social scenes, Anguilla’s beaches provide the perfect backdrop for your Caribbean dreams.


Culinary Odyssey:

The island’s culinary scene is a testament to the cultural diversity that defines Anguilla. From beachside shacks serving up grilled lobster, which I must admit I devoured, to upscale restaurants offering a fusion of Caribbean and international flavours, every meal is a culinary odyssey. The island’s signature dish, crayfish, is a must-try delicacy that embodies the essence of Anguillian cuisine.
Venture into The Valley’s culinary precinct, where aromas of spices and fresh seafood dance through the air, tempting even the most discerning palates. Anguilla doesn’t just offer a feast for the eyes and ensures every meal becomes a sensory celebration.
I know you want my recommendations, so here they are: I recommend Sandy Island for beachside grilled lobster. Getting to this tiny private island takes a boat ride, but it is worth it! Lobster to die for and a remote island to boast about – the perfect laid-back lunch spot, but be warned, the rum punch here packs an extra strong punch!


For upscale fusion, one of my favourite cuisines, you cannot get better than Veya Restaurant, at Sandy Ground!! You will be serenaded by traditional music whilst you struggle to choose just one or two things off this incredible menu! Everything is a win. Top tip – do not miss out on the Lobster Fritters; get a side extra for the table, as one of my good friends advised. For crayfish lovers, it must be Vincy’s, located on Back Street, South Hill. It’s not just the fish that will blow you away here; the views are the best I have experienced in Anguilla. It’s the perfect dining spot.

Warmth of the People:

Beyond its physical beauty, the people of Anguilla infuse the island with its unparalleled charm. Warm smiles and genuine hospitality greet visitors at every turn as we drove past on our Moke’s, creating an atmosphere where strangers quickly become friends, and you can’t help but feel at home. The island’s small size fosters a sense of community, inviting travellers to embrace the laid-back pace and immerse themselves in the local way of life.
As the sun dips below the horizon and the sky is set ablaze with pink and orange shades, it becomes evident that Anguilla is more than a destination—it’s a canvas upon which memories are painted in strokes of warmth, beauty, and everlasting charm.

Exploring Anguilla’s Hidden Gems: Unforgettable Excursions

While the hotels here offer a sanctuary of tranquillity, the allure of Anguilla extends beyond the confines of their luxurious embrace. Embark on curated excursions that promise to unveil the island’s hidden gems, creating memories as captivating as the sea breeze.

The Goat Cave Hike hosted by Quest beckons adventurers to traverse the island’s scenic trails, immersing themselves in nature while discovering the secrets of Anguilla’s captivating caves. This guided trek is a journey through landscapes and an exploration of the island’s geological wonders. Be warned, wear appropriate shoes for this trek. It’s not for the faint-hearted, but if you can reach the cave, you will feel a sense of achievement and exhilaration – it’s a real team bonding exercise and I loved every minute of it! Perfect for corporate trips and activities and one I will be recommending to my business clients.

For those with a penchant for other hands-on activities, Quest also offers the Johnny Cake Making experience. Dive into the heart of Anguilla’s culture as you learn the art of crafting these traditional delicacies, a skill passed down through generations. It was not one of my personal favourites as I like to be out and about more than in a kitchen however, it was great to learn about this island’s delicacy and see how it was made. If you would like to witness the island’s beauty from a different perspective, Sea Life Charters hosts a captivating boat ride around Anguilla, a personal favourite of mine. Sail along the coastline, where azure waters meet rugged cliffs, discovering secluded coves and pristine beaches that remain hidden to many. These excursions are not merely activities; they are gateways to the soul of Anguilla, inviting travellers to forge a deeper connection with the island’s rich tapestry.

An Exit Fit for a Bond Adventure

Having made my grand entrance to the island by boat, my departure was nothing short of a James Bond-worthy farewell—aboard the shortest international flight in the world, a mere 8-minute journey back to Saint Martin for my homeward-bound expedition. Summing up my stay is like capturing the essence of a thrilling novel. Anguilla, with its rich history, pristine beaches, culinary wonders, and the warm embrace of its locals, is not just a destination; it’s an extraordinary sanctuary where time gracefully slows down, allowing travellers to relish the sheer beauty of each fleeting moment. As I delved into the heart of this Caribbean jewel, the tales of its history enchanted me, the charm captivated me, and, inevitably, I found myself irresistibly seduced by the timeless allure of Anguilla.

Nestled in the Hollywood hills (no, not those ones) sits The Culloden Estate and Spa. A former Bishops palace and now a luxury five star hotel with far reaching views of the County Antrim coastline, manicured gardens and woodlands and enough antiques to shake a stick at – this was exactly what the doctor ordered for some serious R&R and we couldn’t wait to feel like queens for the weekend. 

As we touched down in Belfast the rain lashed and the skies darkened. In the brief walk from departures to taxi rank we were sodden, suitcases now resembling sponges, hemlines of jeans fully saturated. Undeterred we laughed, plans of ambling around the coastline in early winter sun were soon replaced with visions of log fires and glasses of red wine and this suddenly felt all the more enticing. If we were going to do Northern Ireland, we were going to do it properly – chowder and chunky knits all round.

Location, location, location

As our taxi made its way up the winding drive, through the gates of the hotel and pulled up alongside the revolving front door, the backdrop of Belfast Lough bleeding into the moody grey skies, our jaws dropped. We knew we were in for a treat, further cemented by our taxi driver cooing “ooooh, fancy” when we told him our destination, we didn’t know we were in for this much of a treat. Towering spires drawing our bulging eyes upwards, following the pitched roof line down to the manicured gardens which at our time of visit were hosting a sculpture exhibition, further adding to the drama. Beyond this, the warm glow of the on site pub, The Cultra Inn, shining like a welcoming beacon and behind that, the faint outline of Antrim coastline and its rolling hills promising breathtaking views as soon as the clouds cleared. Ushered out of the rain by the impeccable concierge team, we were instantly enveloped in warmth radiating from the log fires and staff alike.

The Culloden is a short drive from both Belfast City airport (ten minutes) and Belfast International (forty minutes) and a mere fifteen minute drive from Belfast city centre. For non drivers, taxis are cheap and easy to get or guests can opt to amble through the estate gardens to the nearby train station – fear not, it’s close proximity has no negative impact on the hotel itself – from here they can take the very scenic fifteen minute train ride along the coast right into the centre of town. Or do as we did, walk half the way along the dramatic shore armed with a Baileys laced hot chocolate, making sure you take in the impressive houses and quaint fisherman cottages along the way and jump on the train when the Irish wind gets a little too much. The location and accessibility of the hotel makes it a fantastic option for city breakers and weekend awayers, however, you will be hard pressed to find the want to leave the hotel with everything it has on offer.

Spa time

Having checked into our room and performed the appropriate checks : starfished on the bed to ensure we could both share comfortably – check. Gasped and squealed at the views the floor to ceiling windows offered – check and gobbled the chocolates left for us – check. We de-robed from our sodden clothes, re-robed with our complimentary soft, fluffy gowns and headed down to the spa. It’s always a bit of a ‘hold your breath’ moment when your plus one has worked in the spa industry for years but with an offering like this there was no need. If the hotel started its life as a palace, the spa is the jewel in its crown. As we entered through a hallway lined with geodes and crystals, the air heavy with the heavenly spa smell  – not a whiff of chlorine – a wave of calm and serenity washed over us. The unavoidable flusters of early morning flights and damp commutes washed away instantly. Our shoulders dropped, our chests opened, this is exactly what was needed. A huge octagonal pool swathed in natural light from the glass vaulted ceiling called to us, its warm waters desperate to soothe away any tension. Next to it a long jacuzzi with floor to ceiling windows looking over the hills. A sauna with the same square footage as a family home meaning no uncomfortable knee bumps with other spa dwellers. Loungers dotted around in such a way that never felt crowded. 

The spa treatments boast a fusion of advanced techniques with ancient therapies, menus include ‘inner strength and resilience massage’ and ‘solar experiences’ all of which are aimed with one main focus – to leave you revitalised and restored. We both opted for the inner strength massage, the promise of yogic stretches combined with resilience boosting massage techniques was an offer we couldn’t turn down. We walked into our respective treatment rooms and entered another plane, ninety minutes later and politely brought back down to earth via the relaxation suite, we looked at each other and with nothing more than a smile and a grunt, knowing we had both had the same otherworldly experience. We sipped our herbal tea in smug silence as we returned back to reality.

The Cultra Inn

That evening we ummed and ahed with the idea of heading into the city center for dinner and drinks but with the rain lashing, the massage induced coma only just subsiding we opted to get snug and head down to The Cultra Inn, a pub less than a five minute walk from our room – winner winner chicken dinner. Well, steak dinner for me. 

The traditional pub, all wooden beams and vaulted ceilings, champions local seasonal produce. Relaxed and cosy, the lick of the fire reaching into every corner, this was the perfect end to the day. A full bodied bottle of red, a steaming bowl of Irish chowder followed by a locally sourced sirloin steak with all the trimmings – yes please. A moment of transparency if I may, this pub is not fine dining, nor should it be. Would I say it is up there with the best meals of 2023? No. Would I say, it was exactly what was needed on a cold, gloomy night? Absolutely. Full and content we mosied back to our room, bottle of unfinished red in hand. Climbing into our giant cloud bed – an actual term the hotel has coined and uses with pride, armed with chocolate cake (swiped from earlier) and a glass of red wine – this is how you do a girls weekend.

Breakfast of champions

The following morning, well rested, muscles still soft as butter from the previous day’s relaxation, we headed down for breakfast. Served in the main dining room, all white table cloths and china tea pots, I suddenly thought perhaps my baggy jeans and complimentary slippers were not the correct attire. I was quickly put at ease because the thing The Culloden does so well is blur the lines of what is very clearly a historic palace and all the fixings that go with such a place with buckets of irish charm and an air of laid backness. Yes the wait staff and concierge are suited and booted but they are also ready and waiting to chat the breeze and crack a joke with the guests as if they are lifelong friends, instantly removing any feeling of austerity. 

The breakfast was bountiful, silver cloches itching to be lifted and reveal their treasures – all the components of a full Irish (and English) breakfast, plus touches such as porridge laced with local whiskey and an a la carte offering for those who prefer smashed avocado to white pudding. 

Things to do

Fuelled on a very hearty breakfast we were ready to brace the elements and explore the surroundings. A quick turn through the gardens and on to the coastal path where we allowed ourselves to imagine we were on our way to the Iron Islands (for any Game of Thrones fans, this hotel is the perfect base to explore the Northern Island filming locations and the concierge team can help you plan the best excursion). A short train ride and we were at the Titanic Museum, a must for everyone and then on to an exploration of the city itself.

Returning to the hotel it was time for the rest portion of our R&R weekend and we couldn’t have asked for a better setting. Deciding to head to the drawing room where big sumptuous sofas called our names and a fire roared, we both curled up with our respective books armed with tea and biscuits. Looking up every so often at the big grey sky, listening to the rain pound down until eventually it was time to pull ourselves from our cocoons and get ready for what can only be described as one of the best meals of the year. But not before a long, hot bubble bath.

Supper fit for a queen at Vespers

Vespers is the hotel’s main restaurant – a fine dining affair, serving modern Irish cuisine in the format of a tasting menu. Perhaps unfairly of me, I didn’t have the highest expectations – I have been burnt in the past by hotel restaurants. Chefs stifled by owners scared to push boundaries for fear of losing more traditional hotel guests. Having eaten in the pub the previous evening, I wondered if the offering here would be similar, good but not great. How wrong I was. Perfect plate after perfect plate expertly paired with exciting and interesting wines, all explained in depth by the wonderful sommelier. 

We started with homemade bread and butter and an amuse bouche of  chicken liver parfait and cherry cannelloni with candied oats – my bouche was well and truly amused and if this was the precursor of things to come, I was ready and waiting with baited breath.

Courses followed of duck ham paired with fruity condiments such as cherry puree and pickled pomegranate. Expertly paired so that the acidity and freshness of the fruit cut through the rich game. The most perfect scallops I think I have ever eaten, caremlised on top, pillow soft in the centre, doused in a bisque foam, sitting on a bed of sweetcorn puree. Welcomed texture introduced onto the plate through the charred corn kernels and roe biscuit. Local venison loin cooked to perfection, served with burnt chicory and a chocolate jus. I don’t even like chicory. I would go as far to say it is my most loathed of all the leaves. This iteration however, I gobbled up like some sort of feral beast, using it to scoop and swipe any remnants of the beetroot ketchup until my plate was clean. A plate of local cheese and oatcakes presented so elegantly it seemed a shame to eat it but eat it I did before being presented with a dessert that could have held its own with the works of art residing in the sculpture garden. A perfectly formed ‘Granny Smith apple’, as my spoon cut through the dazzling green glaze to reveal the lightest apple and vanilla mousse – it was heaven.

Concerned if we put another morsel of food in our bodies we may explode, we began to gather ourselves to leave the restaurant when our wonderful server shrieked “you can’t leave yet, you have petit fours and Irish coffee”. We looked at each other, fear washing over our faces but being of the firm opinion if a job needs doing, it needs doing properly we retired to the bar, briskly followed by a tray of homemade chocolates and an Irish coffee that I am sure was more whiskey than caffeine but who am I to tell the Irish how to make their coffee?

The next morning, with slightly hazier heads than the day previous, we pulled ourselves out of bed, sad that it was time to go but content with a weekend of sheer joy and nourishment. We packed our bags and pulled back the curtains just in time to see the clouds part and the sun beam through, casting its fan of rays across the water. And with that, we thought it would be rude to leave such a gorgeous setting just at this moment and so with our last hour to spare we donned our robes, ordered pancakes to the room and affirmed that a girls weekend is the best kind of weekend. Especially one spent at The Culloden Estate and Spa.
