The grande dame of luxury 5-star hotels in London, The Landmark has recently undergone a major £1.3m refurbishment. Part of that project is to launch a brand-new luxury Champagne Bar. It is on a mezzanine level on their famous garden terrace. The vision of tropical palm trees and the eight-storey-high glass atrium recalls a bygone era of glamour and high society. The Champagne bar designed by Alex Kravetz Design is created to blend in with the luxurious surroundings. The main bar is hidden under a foliage-laden glasshouse. The furnishings have a mixture of vibrant greens, blues, and gold that transports you to the Jazz Age era.

Accentuating that imagery is their High Seas High Tea offering. The hotel offers a traditional afternoon tea at their famous Winter Garden Restaurant but at the Champagne Bar, it is very much seafood-focused. It is available every Saturday and Sunday between 1:00 pm and 5:00 pm. You will also hear the melodic piano sounds emanating from the Victorian Winter Garden atrium. They use the term ‘sandwiches’ but what is served up at the beginning is more tartlets of umami delights from the sea. They offer a tartlet of Scottish lobster, a tartlet of poached langoustine, salmon pastrami, Cornish white crab and yellowfin tuna. Focusing on local produce, the freshness of the seafood is top-notch. The salmon and tuna exuded healthy omega-3 fattiness, whilst the shellfish had a gentle sweetness when you bite into the firm, fresh meat. Each creation has been carefully crafted to maximise the flavours of the seafood. For example, the yellowfin tuna is served with ponzu, black sesame, toasted rye, and fennel butter. The citrus notes from the ponzu are a match made in heaven with the enticing tuna.

The fruity flavours were very much in evidence with their scones and desserts. The scones were either freshly baked apple or raisin scones. All the condiments you would ever need were present from clotted cream to a plethora of jams. The options included Bergeron apricot, London marmalade, strawberry, rhubarb, redcurrant & vanilla and raspberry deluxe. Each scone was generously sized and I have no doubt, they would offer you a refill if you asked.

The desserts were exquisitely presented with a parade of appetising colours. If you are looking for something subtle and delicate, there is the tartlet of nectarine, ginger, mascarpone and raspberry gel. The nectarines were sliced with military precision and presented in an intricate rose shape. If you are looking for textural variety, there is the black cherry and pistachio bakewell. The key is all the creations were sweet without being overbearing. And they do offer boxes for you to take away anything you can’t finish. They only use the finest of ingredients from Valrhona dark chocolate in their choux to English strawberries in their Swiss rolls.

The tea offering also shines brightly in this regal afternoon tea experience. They have green teas, herbal teas, oolong tea and white tea. That includes very high-end options such as Snow Buds white tea. which is high-altitude-grown white tea made entirely of silver-haired tea buds. That creates an elegant, sweet-flavour profile with delicate vegetal notes.

The afternoon tea is available at £75pp or £88pp with a glass of Ruinart Champagne Brut.

If you visit in the evenings, they do still offer seafood-focused small plates, as well as heritage tomato tart and British cheese plates. They also serve a caviar selection that ranges from platinum caviar to the rare, golden oscietra. They have a lengthy Champagne selection that includes on the top end, Krug, Grande Cuvée MV. We’ve mentioned in recent articles, how Hong Kong is rapidly developing into a cultural hub of the Far East. Most of the recent openings have been at the West Kowloon Cultural District. However, if you are prepared to travel a little further afield to Sha Tin, you’ll discover a hidden cultural gem that is a mecca for the Cantonese entertainment industry. Hong Kong Heritage Museum has been open since the year 2000 but hasn’t always featured on the tourist maps with visitors focusing on attractions in Hong Kong island or Kowloon.

The total exhibition area is around 7,500 square metres and includes five permanent galleries: the Jin Yong Gallery, the Cantonese Opera Heritage Hall, the T.T. Tsui Gallery of Chinese Art, the Chao Shao-an Gallery and the Children’s Discovery Gallery. On top of that, they have six thematic galleries that show pop-up exhibitions that highlight the diversity of Cantonese cultural offerings.

Their permanent exhibition: Hong Kong Pop 60+ is arguably one of their most popular permanent exhibitions. It highlights how the cultural melting pot that is Hong Kong has created a diverse environment for creativity to thrive. It covers iconic Hong Kong films like A Better Tomorrow and Infernal Affairs as well as Cantopop legends like Anita Mui and Leslie Cheung. The latter has his special exhibition at the moment: Miss You Much Leslie. It commemorates the 20th anniversary of the passing of superstar Leslie Cheung. The exhibition celebrates his tremendous achievement in music and film with countless stage costumes and vinyl records along with his staggering award collection.

Bruce Lee fans will be in seventh heaven with their Bruce Lee: a Timeless Classic and A Man Beyond the Ordinary: Bruce Lee pop-up exhibitions. It is the 50th anniversary of his iconic film ‘Enter the Dragon’ which made him a posthumous superstar and also his unfortunate passing away. The exhibition examines the legacy he has left behind in popular culture, whether it is in film, comics or animation. You might come across action figures based on Bruce Lee in various manifestations, his famous nunchaku or the iconic yellow jumpsuit. The exhibitions include large-scale multimedia and interactive programmes.

Hong Kong film buffs will be thrilled when they visit: Out of Thin Air: Hong Kong Film Arts & Costumes Exhibition. It celebrates the golden age of the Hong Kong film industry and explores the industry both in front of the camera and behind the scenes. It focuses on the importance of art and costume design in Hong Kong films. As you stroll through the exhibition, you’ll come across memorable costumes, props, set designs, drawing manuscripts, paraphernalia, videos and reconstructed scenes of workshops. Highlights include Brigitte Lin’s smuggler lady costume in Chungking Express (1994) and the set design drawing album of Shaw Brothers Studio. The latter was the largest film production company in Hong Kong. They operated from 1925 to 2011.

Although, not all their exhibitions are Hong Kong-focused. They recently held the blockbuster: Virtually Versailles exhibitions. Using cutting-edge digital technology, the exhibition transported you to the famed Hall of Mirrors. And they also had immersive bike installations where you can cycle around the scenic gardens of Versailles. Visitors got to virtually visit Marie-Antoinette’s bedchamber and discover the splendid history of the Palace. The exhibition was a roaring success and particularly popular with locals who were still cautious about travelling abroad post-COVID but still wanted a taste of foreign adventures.

They run public guided tours of the various exhibitions free of charge throughout the week. Most are presented in Cantonese but some are offered in English and Mandarin. They also have online programmes that let you experience snippets of the museum without having to head out to Sha Tin. We were greeted by the doorman ‘Doctor’ upon arrival to the hotel’s grand driveway. We also met a lovely lady named ‘Patience’ and another called ‘Joyful’. Beyond their names – they were memorable of course due to their excellent service, which is something that this luxury hotel can certainly be proud of.

The Fairlawns Boutique Hotel is located in the sleepy suburbs of Sandton which is the Central Business District of Johannesburg and near to all its main cultural sites. The estate is made up of individually-designed suites that exude elegance and grandeur – with the Grand Chateau Suite the pièce de resistance of the whole estate.

We stayed in one of the Courtyard Suites, which wrap a picturesque colonial-style courtyard that is the perfect place for a stroll. Picture Palladian-inspired suites, high-ceilings, four-posted beds, French windows and sumptuous fabrics and textures and generously sized bathrooms.

The interiors are elegant but punchy. Unlike other luxury resorts who embrace a rainbow of neutral tones, Fairlawns Boutique Hotel embraces the rich colours and textures of Africa but with a French manor house touch. Victorian-inspired portraits, French chairs and a veritable greenhouse of orchids are dotted throughout the space creating an ambiance of eclectic sophistication.

The lobby opens up to the Manor House Bistro which blends indoor and outdoor dining spaces and opens up to the striking outdoor pool. The restaurant offers a creative menu filled with international dishes that are perfect for all day dining. This is also where the excellent breakfast is served.

The new space is inspired by nature and connects to the beautiful Courtyard – which is a great spot to enjoy some bubbles while watching the African sunset. Picture this… it’s a typical British summer day (torrential rain), you’ve spent the day outdoors at Warwick Castle (sweaty and busy inside because of the rain), and you’re desperate to feel human again.

Just a thirty-minute drive away sits a stunning luxurious stay tucked away in the scenic countryside between Birmingham and Oxford, our respite from the hustle and bustle of real life.

Arriving at Ettington Park Hotel was like stepping into a fairy-tale, where history, elegance, and friendly vibes all came together for an unforgettable experience.

As soon as we set foot on the grounds, we were blown away by the hotels jaw-dropping Neo-Gothic architecture. It was like walking through the pages of a medieval storybook, and we were totally here for it! Inside, the place was impeccably maintained, creating a welcoming and classic atmosphere.

After an epic day at Warwick Castle, we needed a chill spot to unwind. Cue the hotel’s cosy lounge! With margarita served, we lounged like king and queen, basking in the relaxed vibes.

The super friendly staff were all smiles and eager to make our stay special. In a place like this you expect a level of formality, you will have customers who expect nothing less. The staff offer you the space you need, they’re always there when you need them, but they keep their distance when you don’t. The staff at Ettington made the most of every moment they were with you, making jokes, being incredibly helpful, and they dealt with every table in a unique way.

Now, we LOVE food. LOVE. There’s rarely a meal where I won’t get lost in the flavour. Thankfully, dinner here was the flavour adventure we’d hoped for. The dining hall was nothing short of regal, with its high ceilings, gilded detailing, and glorious chandeliers.

The menu was a masterpiece, offering a feast of mouth-watering dishes. The kitchen easily catered to my gluten and dairy intolerances, so I could savour all of that deliciousness without a worry. I was able to choose almost anything from the menu and they adjusted the recipe, which is a far cry from other places who make you feel like a fussy toddler.

Bed was calling after a bottle of red over dinner and what a bed it was! An incredibly comfortable four poster in the Shakespeare Suite. The room was nice, it had some detailing that gave away it’s age like the huge window and great fireplace, but there was definitely a ghost. In the middle of the night, I went to the bathroom and felt an unwelcoming presence over by the window on the chairs. I’ve never hurried back into the safety of bed quicker than that night!

Speaking of the bathroom… you know when they just get it right? Ettington got it right. Clean tiles, roll top bath, decent products, and soft fluffy towels!

Anyway, after the scary AF sleep for me, we couldn’t wait for breakfast! It turned out to be pure bliss. From all the classics like an English breakfast to a mackerel with scrambled eggs as well as a tempting array of fresh fruits and pastries, our taste buds were in heaven. Again, the attentive staff pampered us like royalty, making sure we had everything we needed to kickstart the day in style.

After breakfast we made use of the spa area with a swim and hot tub, the pool gave off modern Romanesque vibes in its size and shape. Let’s be honest, you can’t go wrong with a spa, and you feel cheated if you don’t use it.

Driving into the Forest Side hotel in a sleek and elegant Lexus LC 500, I couldn’t help but feel a rush of nostalgia and excitement. The tall trees on the driveway looked like something straight out of a Disney movie, and the magic only grew as I stepped inside. Forest Side had been a special place for my family ever since my parents discovered it in 2017. I remember how my dad raved about it, saying it was the best meal he had ever had. Little did we know then that this enchanting place would become a significant part of our lives.

A few years ago, to celebrate my parents’ 25th wedding anniversary, I planned a special surprise for them—a trip back to the Forest Side hotel. The memories from that visit are still etched in my heart to this day. It was a time filled with joy, laughter, and delicious dishes. We indulged in an incredible tasting menu, savouring every bite of the famous marmite home-cooked bread and green butter that my dad had talked about for years.

But life has its twists, and in 2021, we faced a devastating loss as my dad passed away. The pain was immeasurable, but the memories he had created for us remained a source of comfort and strength. To honour his life and the incredible moments we shared, my mum, my brother, and I decided to return to the Forest Side recently, on the two-year anniversary of his passing.

It was heartwarming to see how the hotel had transformed over the years. The once-neglected gardens were now enchanting, adding to the hotel’s charm. The rooms retained their country chic charm, ready to embrace anyone seeking solace in this beautiful landscape. But the true magic was happening in the kitchen, where Head Chef Paul Leonard worked his culinary wonders yet again.Paul Leonard had joined the Forest Side team with an impressive culinary background, having cooked in Michelin-starred kitchens under renowned chefs like Marcus Wareing and Andrew Farlie. His passion for locally sourced produce mirrored the hotel’s food ethos, reflecting the essence of the Lake District’s landscape.

As my family gathered in the bar for pre-drinks, I appreciated the thoughtful gesture of offering alcohol-free wine alternatives. It showed that the Forest Side cared deeply for its guests. The familiar flavours of the marmite bread and green butter brought back cherished memories. The 8-course tasting menu was as delightful as ever, a tribute to the times we had spent here with my dad.

The Forest Side had always held a special place in our hearts, but now, after my dad’s passing, it became even more meaningful. It was more than just a beautiful hotel; it was a sanctuary where we could cherish his memory and celebrate the love he had given us.

After a restful night’s sleep in our luxurious rooms, we returned to the same restaurant for breakfast the next morning. As we sat down, we couldn’t help but notice the magical sight unfolding in the garden outside. Birds were fluttering around, playfully opening the bird boxes to find their breakfast. It was a heartwarming spectacle, and we couldn’t help but feel a sense of wonder at the harmony between nature and the Forest Side’s enchanting atmosphere.

As I looked back on our journey with the Forest Side, I was grateful for the incredible experiences we had shared. The culinary legacy that Paul Leonard had started. The Forest Side was a symbol of love, resilience, and the power of awakening, just like Sleeping Beauty, to create lasting memories for generations to come.

I’ve been binge watching Maritime Masters, on Discovery+, for those not in the know, it’s a sneak peek behind the scenes of luxury super yacht, the Scenic Eclipse as it takes to the seas delivering guests an extraordinary, luxe travel experience like no other.

The first episode sees the Scenic Eclipse begin its epic voyage to Antarctica from San Diego. The episode also introduces and follows the ship’s ‘Masters’, the dedicated experts who lead the voyages. The Masters include VP Oceans Hotel Operations, Chef Tom Goetter. Goetter who oversees up to ten dining locations on board the yacht, managing chefs, and menus from producers to table is a handsome, mild mannered German with oodles of experience under his belt.

Goetter is no stranger to fame, he competed on “Top Chef Germany” in 2018 where he finished as a finalist. He trained under Thomas Keller and his team in Napa Valley and has travelled the world extensively, specialising in international cuisine with experience working at Michelin-starred restaurants, high-end hotels and ultra-luxury cruise ships. Since then, he has been the Executive Chef for the Scenic Eclipse, a six-star world’s first Discovery Yacht, serving a variety of cuisines, including Modern Asian, Asian Street Food, French and Italian. He features heavily in the show, alongside his team, innovating and showcasing unique, memorable creations.

House of Coco caught up with Goetter to get the skinny on what goes on in the kitchen of a super yacht and how he manages to switch things up while still deliver quality cuisine at sea.

The key to delivering exceptional dishes comes down to the preparation. Goetter and his team are at sea for around nine months of the year, so it requires lots of planning. “For Scenic I spent time on a river ship in Cologne where I created menu cycles, you need to have lots of recipes. We started with 3,000 and now have 5,000.It’s a complex process, our longest menu cycle is 30 days as we don’t usually have a guest on for longer than that. I calculate each dish down to the gram so we can prepare six months in advance and start sourcing the produce.” The menu reflects the destination, and this is mostly due to highlighting local produce which quite often is the biggest challenge. “Moving around is hard, you are relying on suppliers and resources on the ground which can change so you have to be creative and flexible.”

Goetter is known for his creativity, he takes inspiration from people and places. He says, “I travel to lots of places and listen to people from mothers to street food stand holders, they are all full of knowledge and that’s how you learn something.” Unlike some chefs, his kitchen is somewhere you can speak up. “I lived in Bali and was recently in the Scenic kitchen cooking a Balinese dish. The dishwasher in our kitchen is from Bali and he tried it and said that’s no good. I said cook it with us, teach us so we can get it right.” Some chefs wouldn’t have taken too well to criticism, but Goetter is free spirited, he wants to hear others input into the project so the food quality is excellent. He concludes “I don’t use fear in my kitchen, when you mentor people and give them a level of respect they are loyal and want to work for you and that’s important.” Which probably explains why all his staff returned to his kitchen post covid. I can tell just from our chat that Goetter is one of the good guys, someone you’d want in your team.

Having been on Top Chef, Goetter is used to having a camera in the kitchen and it doesn’t faze him. He thinks Maritime Masters has turned the chefs in his team into ambassadors and given them a platform to showcase their skills.

Goetter and his team want guests to have a culinary experience like no other. He says, “I love it when a guest gets on the yacht with prefixed ideas about a particular food or dish, then tries it and changes their mind. We want our food to make an impact, the experience comes when guests change the way they would normally eat and appreciate something new.”

The culinary ethos on Scenic is rooted in sustainability and innovation. Goetter tells me, “Sourcing local should be obvious, it’s extremely important to be sustainable. We don’t want to waste food on the ship, so we recreate dishes out of single produce. For example, we might take a carrot, dehydrate the carrot skin and use it again in another dish. If we see strawberries turning, then we will make something using them. We have sustainability competitions on the ship to see who can create the most innovative dish so there is no waste. We also grow our own herbs on board and produce our own fresh water.”

When he’s not onboard the Scenic you’ll find Goetter exploring tastes around the world. He says, “I eat where I am, I always go where the locals go, that way you get the best food. If I’m in Japan, I’m at the fish market or the spice market in Dubai. I love street food.” Goetter is travelling when we speak, he landed in Germany a couple of hours before our interview and is off on another trip the following day, sourcing more inspiration and ideas to make sure his cuisine remains ‘fresh’.

The first thing I noticed setting foot into Martinhal Lisbon Oriente was the fragrance. Deep but light; warming and calming. It was instantly inviting and straight away made me feel happy to be there. The kind of feeling that automatically eases your shoulders down an extra inch and is an indication of the relaxed elegance that permeates the hotel. Smiling welcomes from each of the staff, plus the eye-catching art from local artists dotted around the lobby all added to the feeling of a laid back yet fun lux and I knew that I was in for a great mini-break.

Invited as part of a press trip to visit the newest Martinhal property, Martinhal Lisbon Oriente, located in the Parque das Nações district in the east of Lisbon; an area of the city that has been gradually building a reputation for culture; street art, the Oceanarium, a plethora of restaurants and bars and of course the famous cable cars that run parallel to the river past the Water Gardens. In contrast to the historical old town, Parque das Nações is modern, cool and urban.

I usually reside in the tranquil and lush rolling hills in the heart of the beautiful English countryside but from time to time I enjoy a change of pace – a bit of adventure, perhaps a little sun, a bit of experiencing another culture, and it goes without saying, exploring new foods so I leapt at the opportunity to pack my laptop, swimsuit and sunglasses to head to Lisbon, one of the coolest cultural capitals of Europe. In 2018 I spent a week exploring the south of Portugal and ever since Lisbon has been high on my travel list; the climate, the food, the architecture, the history, did I mention the food? Pastel de nata! Salt cod! Cherry liquor!

The first port of call upon arrival was to sit in the garden of the restaurant, Terrace, for coffee, cake and local pastries. Newly constructed as a living building with foliage inside and out, Martinhal Lisbon Oriente is an Oasis within a city boasting panoramic views of the vast river and Europe’s longest bridge. The Terrace has a huge open kitchen where you can see the chefs preparing the fresh menus daily. Taking the theme of being in the eastern part of the city, the menus are based around the concept of “looking east” with lots of fusion from the Middle East, India and Asia – and of course, lots of daily caught seafood. Mesmerised, I watched a chef roll sushi – which then to my absolute delight was served to our table. At lunch I chose the pan fried stone bass on a base of quinoa mixed with avocado and green mango, cut in a brunoise with surgical precision which was every bit as good as it sounds. As a chef who loves dining out, it’s important to me that food delights on the plate – you have to enjoy the dish before you take the first mouthful; a mantra clearly shared by Terrace’s kitchen team. Over the weekend I also ate such delights as Thai beef salad, spiced broccoli pakora, burrata with pineapple chutney and honey, black cod with pak choi that was accompanied by a moreish miso sauce poured at the table, veggie spring rolls, chicken satay skewers. Even the on site baked bread came with hummus, labneh and flavoured oils. The food throughout the trip was consistently flawless, whatever meal of the day it was. With a wide selection of local wine on the menu and seasonal cocktails available in addition to juices, smoothies and non alcoholic cocktails – everyone is thoughtfully catered for which seems to be the MO of the Martinhal brand.

Historically designed for families, Martinhal put connection at the heart of everything they do; for parents on holiday with their children, being able to relax and reconnect mean their children are also relaxed. No matter the age; from the trampoline outside in the garden to the organised activities and babysitting services, there are a plethora of things to do and everything has been thought of. As someone without children, a “family friendly” hotel wouldn’t necessarily be my first choice for a holiday but interestingly, I found Martinhal Lisbon Oriente more grown up and slick than venues not designed for families – quite simply because the way Martinhal have curated this niche is so successful that in comparison to other places where children are left feral to run around screaming, burning off their energy, here both the family unit and the individuals the unit consists of are considered meaning in fact I barely noticed that there actually were children around and among the slick furniture, the neon art and the sun loungers.

Martinhal Lisbon Oriente is slightly different to its other properties in Lisbon and Portugal in that The Parque das Nações district itself is relatively new. Having been purpose built for the World Exposition in 1998 the area has a lot of business travellers plus people from all over Portugal and the world for events at the Altice Arena and again, the thoughtful details, the commitment to connection, Martinhal Lisbon Oriente have built a full business suite, including glass soundproof pods, for digital nomads like me who just want to explore the world while working.

We spent time as a group being looked after and touring not only the Parque das Nações but the old town as well. From the hotel, you can easily reach by foot the second largest aquarium in Europe, a fantastic private boat tour to Belém where if you’re as lucky as us you may glimpse dolphins in the Tagus River as you sip on a glass of Vino Verde and even get to wear the Captain’s Hat as you take on the role of skipper (which I highly recommend for a memorable Instagram moment!). You can participate in street art walking tours and walk to a multitude of restaurants – though you could easily eat every meal for a week at Terrace and never feel that your inner epicure is missing out. A short car ride away you can be in the historical centre browsing little boutiques, marvelling at the architecture and snacking on pasteis de nata or salt cod fritters with a side of chilled white port.

While having dinner at the other Lisbon based Martinhal property, Martinhal Chiado, I sat next to Roman, one half of the husband and wife team behind the brand who talked to me at length about the connection that they are trying to nurture and the importance of quality time, be it as part of a family on holiday, or a digital nomad taking advantage of technology and the freedoms it can afford. The rooms are furnished with kitchens and even washing hidden away machines in the rooms bringing an extra level of freedom and flexibility and making it perfect for long or short term stays.

At the Oceanarium there was a sign quoting “nothing lasts, nothing’s finished, nothing’s perfect” and isn’t that life itself in a nutshell; always in motion, the sands of time rushing away. The best we can hope for is to find moments to build memories; to strengthen connection; to each other, to the land, to the food on our plates. And as a foundation for that desire, Martinhal Lisbon Oriente is about as close to perfect as it is possible to get.
