The Icefields Parkway is the beating heart of Alberta, and a drive across its season-altering 181 miles engulfs the mind in all the preconceptions one might have of Canada before journeying there. Whilst most might sit bored during a road trip, conjuring up games of I spy, the famed Icefields Parkway makes no time for apathy. Passing between mountains drenched in snow that look akin to a Mac screensaver, to wide rocky riverbeds and cheeky mountain goats, the trip makes for a feast for the senses and becomes an eclectic extravaganza paved into your memory forever.

Describing it as magical seems an injustice. In fact, describing it at all is arduous, because this UNESCO World Heritage Site sits in the mind as somewhere you simply must visit in order to revel in the spellbinding nature of it all. The road trip is renowned for taking travellers from Jasper to Banff, traversing the beauty of the Canadian Rocky Mountain Parks World Heritage site from Jasper, along the parkway that leads to Banff, whilst soaring past eerily beautiful lakes, from Herbert to Bow and Peyto.

Places touched upon include Jasper, Kootenay, Yoho, provincial parks and Banff National Parks and, whilst it’s estimated to take a minimum of three hours, the many beauty indulging stops along the way accumulates many more hours on the clock. A stop-off at where the filming of The Revenant took place might be on your list. The movie that sees Leonardo Di Caprio fending off a grizzly and traipsing through billows of snow is filmed here, highlighting scenes that significantly reflect the weather conditions of Icefields Parkway. In fact, in no better capacity will you witness all four seasons in such a short space of time. The warmer climes of Lake Louise, Banff, turn to leaves in autumnal shades falling from trees, into gallons of shining white snow on top of mountains, that lie in fields jotted with babbling brooks and wildlife.

Wildlife is rife, from bears to bobcats; in fact, we got held up as an elk plodded slow as a snail across the road, causing lines of cars but no complaints. Seeing wildlife up close and personal aligns as one of the top highlights during a Canadian Rockies visit, and my eyes remained at all times peeled for a grizzly bear, unmistakable by their dish-shaped faces and muscular humped shoulders. Black bears too haunt the Icefields Parkway, plodding along and chomping on plants and berries to appease their omnivorous diet. Alas, I didn’t see a bear and decided wandering through the foliage to find one wasn’t the sharpest plan. Maybe next time.

The Icefields Parkway caters for a cold safari, with over 53 species of mammals and over 260 species of birds playing amongst its eclectic expanse. I clapped my eyes on woodland caribou and the occasional mountain goat, which was triumph enough for me. If you’re lucky, however, you may be able to seek them all out, with bighorn sheep, lynx and bobcats, marmots and ptarmigans flitting and scurrying about. Slow down the car as you pass through the Kerkeslin goat lick, just 15 minutes north of Sunwapta. Mountain goats congregate on the rocks, licking the salty mineral deposits left there, and show off their impressive footwork!

Animals aside, or blocking the road rather, the hair raising spot to begin your drive is Lake Louise. The dreamlike landscape was, quite possibly, the most beautiful place I’ve ever clapped my eyes on. The emerald green waters, offset by rugged peaks and glaciers, sparkle captivatingly. The Victoria Glacier acts as a tremendous pin-point before a trek about the area. However, if you’re unprepared to battle fellow tourists, I highly suggest jumping in a canoe and taking to the waters. You’ll paddle out and either sit dumb-founded in the centre as you take in the sheer velocity of it all or make your way calmly around the glistening circumference. Beware, the water is a chilling 5C at best, so it’s recommended you don the life jacket at all times, but afterwards you can clasp your hands around a hot choc at the Fairmont Chateau Lake Louise and replenish lost heat.

Waterfalls, too, dominate the Icefields Parkway. Athabasca is perhaps the most impressive, with its bright blue waters set against mountainous backdrops. It’s an idyllic area to explore various trails and capture the sunset alpenglow. Sunwapta Falls also make for a popular stop-off. Descending into deep limestone gorges, the falls feed off the Athabasca Glacier, and boast the same icy blue tones. For a place to stop and refuel between the falls, swing by Communitea Café, a favourite of Matthew McConaughey and family. The adorable spot can be found serving up delightful, fresh and Instagrammable bowls, snug in Canmore, and replenishes the body before journeying on.

Living up to its namesake, this road trip also sees nomads trek across the largest ice field in the North American Rockies – the Columbia Icefield. You can admire its 325km expanse from the Highway, or board an enormous bubble-wheeled bus and indulge your inner Colin O’ Brady. Moving on to another day, you can reach the Parkway’s highest point – Bow Summit – at approximately 7,000 feet. Out with the camera for views of a lifetime. A trip onwards to Peyto Lake and a viewing point there will see you in utopia Canadian style. Still following the Saskatchewan River, take in spectacular falls and don’t miss glancing the fauna and flora as it all blends to make up this huge natural mural.

Time for a refuel? Obviously, the tea stops, restaurants, hotels and so on, have names as intriguing as the natural sights themselves. For instance, the Num Ti Jah Lodge by Bow Lake, for a room and food. Baker Creek Mountain Resort, Banff Tea Co tea shop and Lake Agnes Tea House to name a few, will help plan refreshing, relaxing and reflective road stops. And, if it is tea you love, then join the trail to the Plain of Six Glaciers Tea House, close to Mount Lefroy on the Continental Divide close to the Victoria Glacier – a favourite tea house hike apparently!

Venturing on, somewhat akin to Iceland’s Blue Lagoon, the Kananaskis Nordic Spa is a 50,000-square foot alpine retreat that can also be found along the drive. Sitting just 45 minutes southwest of Calgary, the spa is cradled by mountains and wildlife, and submerges you in relaxation. Here, you’ll find five pools that differ in temperate, including Banya, Finnish and Barrel saunas, and an Alchemist and Eucalyptus steam cabin. You feel immediately at one with nature, amongst rugged peaks and tartan dressing gowns. Alberta’s Kananaskis Nordic Spa is somewhere where you don’t even want your phone – there’s something far too tranquil, too Bear Grylls about it all that technology just seems rather alien.

What are the best sights? How long is a piece of string? As soon as we arrive, we sit down with a specialist guide to work out what activities we’d like to do during our stay – from responsibly whale watching tours to shark diving at Gansbaai and coastal guided walking safaris.

While the focus is on the experiential, no detail has been overlooked when it comes to the rooms. Ours is part of the Garden Lodge – one of 11 free-standing suites set among the bush, through ancient forest and greenery alive with the hum of wildlife.

An unassuming stone exterior hides our expansive suite – with a lounge and wood-burner for a cosy Scandi feel and a selection of books to keep even the most fervent naturalist happy. Floor-to-ceiling glass doors open onto a private deck with sun loungers – a haven surrounded by the chorus of the Fynbos. Picture windows frame the view from a plush oversized bed, out over the dense Fynbos and down to the windswept sands of Walker Bay. In the bathroom, a free-standing soaking tub sits in a corner window, so close to the uninterrupted nature around you you’d swear you were bathing al fresco.

The separate Forest Lodge offers a further equally luxurious 16 suites, with open fires and two with private pools – all sequestered away within the Milkwood forest and offering similarly stunning views, the only difference the slightly more sleek feel to the common spaces. There are also two private villas which include a personal chef and guide, perfect for families or groups of friends.

Indulge in Nature’s Symphony: Sunset Delights at Garden Lodge

Sunset at the Garden Lodge is a real event – guests congregating around the freeform pool with a gin and tonic (mixed with a sprig of rosemary from the herb garden) as the sun sinks in an amber flash. We sit down to a candlelit dinner on the verandah – surrounded by the nighttime sounds of the bush and the occasional quacking of the Cape River Frog. Our host Princess expertly guides us through the locally sourced four-course menu – from the mussels which come from nearby Gansbaai to the freshest herbs and vegetables grown here on the reserve. Even the honey for our ice cream is produced here – made from the rare Erica Irregularis its deep floral flavour is one to be savoured, as it can be found nowhere else.

Aside from the thoughtful staff, this intimate hotel feels all the more special thanks to the presence of the charming owner Michael Lutzeyer, who flits between tables checking up on guests.

Generously insisting that we have a bottle of one of his favourite wines ‘The Last Syrah’ with our dinner (a limited edition bought from a friend at the Cape Winemakers Guild, an association of South Africa’s finest winemakers) – Michael kindly offers to take us out on a 4×4 botanical safari in the morning.

This is how we find ourselves up before breakfast – racing off across the patchwork of trails in one of the open-topped Landrovers. I’ve never considered myself to be interested in flowers, but Michael’s depth of knowledge and passion for this unique floral kingdom is infectious – he’s also great fun.

Exploring the Flora of the Cape with Grootbos

In the UK, he explains, there are 1,550 species of flora. Compare that to the Cape – where there are 9,500 (6,500 of which are endemic) and you start to see the significance of this region. Six new species were even discovered right here on the reserve, he tells us with a proud smile.

This is botany brought to life – with fascinating stories centred around the fynbos. From how a sunbird’s beak fits perfectly into a flower, or how the fires that ravage this land are crucial for its survival – with some plants depending on this heat to for their seeds to germinate. Every few minutes we pull to a stop, Michael having spotted something minuscule in the bushes, each with a story to tell.

We’re also able to take a guided tour of the organic farm and horticultural college – all part of Grootbos’ work to both conserve the critically endangered fynbos, as well as transform the lives of local communities.

The Sustainable Legacy of Grootbos Foundation

Established in 2003, the Grootbos Foundation has turned the reserve into a world leader in progressive luxury tourism. Every action they take, explains Michael, should benefit the community, or have a positive impact on the environment – from the fresh fruit you eat at breakfast to the recycled candles in your room.

Initially run as an agricultural training program teaching farming, beekeeping, and animal husbandry, the Growing The Future organic farm has since expanded to provide career guidance and internships focused on entrepreneurship. The farm itself is run as a commercial enterprise with all goods produced here sold back to the Grootbos Lodge and kitchen – the income providing funding for further Grootbos Foundation Projects. Even the lodge’s water supply is run as a self-sustaining business by the Foundation, with a solar-powered pump and reusable glass bottles eliminating tons of plastic waste.

At the Green Futures Indigenous Nursery, we see Grootbos’ approach to conservation in action – from chatting with one of the resident ecological researchers to the Green Futures students tending the on-site nursery – working towards the accredited courses offered by the Horticultural and Life Skills College.

Returning to the reserve in time for breakfast, we find a spread of homegrown fruits, jams and marmalades, salmon blinis and cheese from local dairies. That’s in addition to a hot a la carte menu, from which I choose the Grootbos Farm Benedict – two impossibly orange yolked eggs on a bed of spinach and micro-herbs – all from the reserve. Eaten on the sunny terrace surrounded by morning birdsong, it is quite simply bliss.

After breakfast, Michelle who runs the on-site stables (with 19 gleaming ponies and horses for all levels) takes me for a gallop high up in the hills on a black horse called Flame. The hills around us thrum with life, buzzing with birds and insects, flowers flashing past flame’s pricked ears in a haze of purple.

It’s then I realise I’m looking at this landscape afresh – with a sense of wonder for each element that creates this ecosystem. From the fynbos to the bees, chickens and vegetable gardens, Grootbos is protecting not just plants, but the people that call this place home – holistically and sustainably, this is surely the future of eco-conscious luxury travel.

For dinner, we ventured next door to the Le Trou Au Mur Restaurant, which serves up traditional Moroccan cuisine in true contemporary style. Art-deco meets local craftsmanship inside the restaurant, but the piece de resistance has to be the rooftop dining area. Atmospheric and undeniably romantic, there’s no better place in the city for a candlelit dinner than Le Trou au Mur. The restaurant has its own clay ‘mechoi’ or furnace, where our classic ‘Tangia’ was cooked. The Tangia has been described as a quintesential Marrakchia dish. Paired with a nice medium-bodied glass of red wine, and you’d be hard done to find a more delicious meal in this colourful city.
